Lunch time ideas needed

Hi there.

We currently have a boy with us for half days. He has lunch with us before he gets picked up. (19 months) Currently we are doing sandwiches but he tends to just eat the filling and leave the bread unless it's toasted. We want to give him variety so he experiences different kind of foods. Anyone have any suggestions? Needs to be fairly quick to prepare as we don't have much time to prepare it.

I serve sandwiches, wraps, pittas, crackers/breadsticks and the like with salad. If it has a meat filling I tend to have cheese chunks, cucumber, pepper, carrot sticks on the side then they usually have yoghurt and piece of fruit. Some children don't like the fillings inside so maybe I'd give bits of toast/bread/pitta with maybe ham on the side with the rest of the stuff I mentioned above. I do this sort of food as I don't have time to do bigger meals at lunchtime.

scrambled egg, omlette, tuna pasta, cheese on toast, toastie, breadsticks and houmous, beans on toast, soup prepared before then heated.

Pasta with some kind of sauce - quite quick to make, as the sauce can be done whilst the pasta cooks.

Stir Fry with Noodles - quick and easy, plus can include a variety of veg.

He may however prefer finger foods such as those suggested by Looneytune.

I find jacket potatoes are always a good lunch option - just pop one in the microwave and serve with anything really - cheese and beans, tuna and sweetcorn, grated cheese, chopped ham and tomato I do from "scratch", otherwise I always have pots of Annabel Karmel style veg sauces, cheese sauce and ratatouille in the freezer (I make in bulk every 6 weeks or so) which I serve with the jackets or pasta for a really quick and nutritious meal.

I also like using leftover rice for "egg fried rice" the next day - just add a handful of frozen mixed veg and a couple of eggs and hey presto!

Oh BALD, you beat me to it!!! I learnt about rice and pasta on my Food Hygiene course and was Shock and Blush at it because I've always reheated chinese from the night before and never thought anything of it!!

Blimey, didn't know that!! I don't generally leave any kind of cooked food out for longer than an hour though, its something I've always been quite "funny" about, so think I've been safe in the past - I cook, we eat, and half an hour later I'm already tackling the kitchen, putting leftovers away etc.

But rice of all things....Shock
