OK, we now have a glut of eggs - all ideas welcome

4 chickens - all laying now - they are laying eggs faster than we can eat them, but not so much faster that we could reliably sell any of them IYSWIM.

So I need new and interesting ideas - DH and DS used 12 to make pasta at the weekend, which was great, but there is no way we can do that during the week - I am fed up to the back teeth with DH doing fry-ups when he is working @ home - he makes so much mess

Ice Cream and meringues - use the yolks for the ice cream, whites for the meringues
Cakes (obv)
Pancakes
Yorkshire Puddings/Toad in the HOle

When I get too many I send the kids round the street knocking on doors offering them to the neighbours! We also do swaps with a neighbour who has an allotment.

give them to friends? i'd be chuffed to take some nice fresh eggs off someone with chickens.

otherwise... meringues, omelettes, proper custard (inc custard pies), egg fried rice

Spagetti carbonara uses one per person and Nigella's choc maccaroons with the whites, I never seem to have enuff eggs though we have 4 layers - dd sells eggs to pay for henfood.

Cakes/Pancakes/Yorkshire Puds don't use very many - one of the reasons we currently have a glut is that the DC turned down boiled eggs and soldiers (8 eggs, DH's offer) in favour of pancakes (1 egg, my offer) on both Saturday and Sunday - the other 'challenge' is that no-one except me really eats cake in this household.

Giving them away also an option although chickens are so common around here that there aren't as many takers as you might expect.

stealthsquiggle, me too! I have 50 eggs on the work top, my neighbour has just insisted on buying a dozen at £3. I normally give her some each week, as she feeds my cats when we are away and won't accept anything, but she now says she wants to buy a dozen a week.

I am on my own Mon - Fri, I have two poached everyday, the mindies have eggy bread with 6 eggs.

DH will cook scrambles for 2 tomorrow with 6, and the same again on Sunday.

I give them away in boxes of 4, which are quite sweet, and I use them for dinner party gifts done up in cellophane and ribbon, people love to receive them instead of wine or chocs.

I have made a birthday brunch hamper for a friend, smoked salmon, cream cheese, bagels and a half bottle of champagne with 4 eggs, it looked lovely and was very much appreciated.

How about giving them to your local homeless shelter? They would probably snatch your hand off for providing free food.

You can suspend them in isinglass - I think they keep quite well in it for a few months.
