What do you make when you have too many eggs?

And no, that's not the start of a lame xmas cracker joke

Mine are laying 5 or 6 a day at the mo and we can't keep up. Baking. Incubating. Giving them away. Any other thoughts/ideas?

Ice cream! I asked for an ice cream maker for christmas, and they make the BEST ice cream!

Hard boil them and pickle them! DH believes they last forever - he was eating some today that came from a chicken that died about 2 years ago (from fright when a cat came near)...

pancakes, eggs and bacon...(this is one one we do quite a lot)
omelette, pastry(using egg yolk, freezes well), quiche, with the homemade pastry and lots of eggs.... muffins, some biscuit recipes use an egg, which can be frozen, I have heard of people freezing egg white(though I have never done this) meringues, lemon meringue pie.... eggy bread, scrambled eggs.

we are getting 4 a day, just doing a wee bit more baking means I have hardly any spare eggs atm, and my neighbours like getting eggs too.

You can freeze the whole egg (opened). When we have a glut, I freeze six at a time in small freezer bags - they do for scrambled egg in the morning.
Or you can use loads up with lemon or lime curd - there is a thread on this somewhere recently.
If you have millions of eggs and can't sell them or give them away then old fashioned isinglass keeps them for ages.

Dh likes pickled eggs. Will look in to that one today to start with.

I really didn't know you could freeze eggs like that, gentleotter. I like that idea. Especially for the winter when they stop laying. Do you know how long you can leave them in there for?

Hi Wellies- I'm not to sure on how long you can leave them in the freezer but our frozen eggs are probably in there an average of a month.
I worked out that a decent sized plate of scrambled egg uses six eggs per person each day (or the eggs can be used in sponges, omlettes etc) so that way you use them very quickly.
I am not keen on keeping eggs more than a week old but that is just a personal thing as they keep much longer than that. Sometimes we end up with masses of them so the freshest ones are sold from the farmhouse door or on an honesty table.
(Our diet is probably frowned upon due to the massive amount of eggs and dairy but for what it is worth our cholesterol levels are very low.)

i bake and focus on eggy meals when we have too many. our new neighbours have asked if they can buy some. i freeze egg whites and when we have four or so make pavlova for pud. delicious!

you can easily use 6-8 in a nice frittata, with potatoes and chorizo. yum
fresh lemon curd is also delicious but I have to admit duck eggs are even better for this.

ironically, with today being easter, DS has started to receive painted hard boiled eggs from all our orthodox neighbours... and we already have about 15 fresh ones in the fridge that I need to use up! Looks like it will be a cooking and freesing day today
