Probably been done but what's your easiest one pot meal for camping?

I know it's supposed to be summer but I still like hot food when camping. I tend to do meat and veg stew or chilli, or maybe a veggie dish.

What's your easy dish? Or any other food tips? We take Ainsley's cuppa soups and cous cous. Sometimes I make jacket wedges and then heat them up in a little casserole to go with the rest of the food.

For easy breakfasts we take scotch eggs, little cereal packet that you can buy separately in Morrison's and I also do fry ups with sausage and egg but usually take the skin off and make patties before we go as they cook quicker.

risotto.

put bullion in with the rice then just make it up with water instead of stock... warm and yummy

Bulgar wheat (like couscous but better for you I think) with onions, pepppers, chilli, paprika, stock and goats cheese. Amazing.

All these sound yummy, just the sort of food I like. When I was a kid our special camping 'treat' used to be Vesta curries. Probably not on the Mumsnet healthy list but I loved them!

Spicy rice,

Saute onions garlic redpeppers and maybe celery in oil

add tsp each of turmeric, cumin and coriander (ready mixed in old 35mm film canister)

stir in rice top up with twice the volume of water from the previously boiled kettle.

Simmer til cooked and stir in cooked protein of choice, eg prawns, chicken, fish.

Optional finishing touches fresh coriander and lemon

This soup is very lush & easy to do. Serve with a nice crusty loaf. For the grown ups a spoonful of smoked paprika spices it up nicely too. It's one of those odd recipes where the end result is sooo much more than the sum of the parts. Reasonably cheap which is a bonus.

Thanks JetLi. I use smoked paprika a lot and dss enjoy it so will add that.

Dp and I were very bad this weekend...as it ended up just he and I ...dss were off with dad...we lived on takeout Plus had Indian buffet for Sunday lunch. We really enjoyed it but it's a one off. Wouldn't dare to count the calories!
