Hey Happy Campers

We tried out our new BBQ for camping this evening and have just eaten a a meal of very charred chicken, not looking forward to a week or two of over-charred meat

Please share your best camping recipes! There must be nice things to cook on a BBQ especially any veg ideas, I'm not very carniverous (we do have 2 burner I should mention).

If we don't improve on our chicken cooking I think it's going to be a salad based holiday!

halloumi on the bbq is something close to heaven

Oh see we cook on open fire/fire pit - huge casserole pot/paella dish - chuck in chicken thighs, several tins of tomatoes, chopped, some seasonal veg, including potatoes and carrots. Cook for several hours and serve with crusty bread and a good glass of wine/beer.

Large bit of fish (sole/trout) ideally with skin on with lemon, tarragon, salt, pepper, olive oil/butter, cover in foil, put on BBQ and leave til cooked, serve with baby new potatoes and crusty bread.

Also agree Houloumi is lovely on kebabs.

we also eat fresh scallops on the bbq if we'r enear the coast

and in the pot on the burner we mainly do rissottos of various types, if you use powdered bullion you can put that in with the rice and just top up with water not stock.

OK so what did we eat last week ? We had a Cobb and an open fire to cook with.

Best emal by far was locally caught mackerel, seasoned with chilli and seasalt, wrapped in foil and cooked on the fire, served with salad and crusty bread.

other meals included a gorgeous curry done as a one pot (a single burner would sort; needed for kettles anyway surely?); gorgeous black beef steaks; stuffed peppers wrapped in foil.

trick IMO is buy what's local and fresh on the day, and it will almost certainly taste good. And ratehr than cooking dry recipes you'd never eat at home, work out how to adapt- cassoulet for example is easy in a pot and served with bread; pasta a basic; skip cheapo burgers and sausages however.

Oh and a family fave- make home amde burgers in different flavours (pork and apple, lamb and mint, beef with a wedge of stilton in the middle) and freeze.... take in your cooler bag and they'll store fine. We also tend to marinade some fish or chicken (eg salmon in lime and coconut), freeze then allow to defrost en route for a nice but easy emal.

You guys are amazing, all that sounds a whole lot lovelier than what we had. Shall write this down before I go, but you're right fresh local food and being outside (hopefully not in rain!) will make everything taste pretty good!

We use a gas cooker, so I won't offer any expertise on BBQ dishes. But I must just add that cake and custard are essential to round off the day. Easily makes up for any culinary dodginess on the first course!

Ginger parkin anyone?

Oh so is Eton's Mess! DH is having this on his birthday next week. We are also having curry (chicken curry and dhal) but that is being cooked beforehand and heated up there. We are making chapatti batter and cooking it on the open fire.

We're planning a calamri day next time: easy enough to make up a batter, and squid is really affordable. And yet so very naice comapared to dodgy banagers and the like 9though have a dad who works in a cheap sausage shop so know Too Much IYSWIM)

I've got THIS BOOK and it's brilliant. It's my camping bible! It's got some great recipes for breakfast, dinner and tea as well as snacks.

That book is on sale at our local The Works. DH coincidentally bought it today. Don't know how much but they're usually cheap.
