I am taking the DC away for the first time ever on my own (well not entirely, am going with a big group of friends but I will be the only adult in the tent). So what quick easy tasty meal recommendations do you have? We are having baked potatoes (fires are allowed so will cook them on the fire) with cheese and beans 1st night and pasta second. But have no ideas beyond that (luckily we are only going for the weekend). Do you all have those ambient meals or are there other delicious dinners I can make with a two ring burner that don't require making in advance?

ready cooked rice you can reheat with a little oil/butter and chilli.

Omlettes.

Lots you can make with een a one ring burner I think

Are tehr any shops close by? Our standard fayre is whatever meat or fish looks nice with salad and decent bread. So only one burner needed to cook protein. Othrwise a curry is nice and yummy outdoors, or maybe a sausage casserole with rice? Chuck in tinned white beans, tomatoes, etc etc and you have a real treat

the Cadac website is pretty useful We have one as some French sites we stay on won't let us use a bbq (fire risk etc) and lots of ideas are on here.

otherwise yes yes yes to Clarissimo's ideas.

Ooh great ideas there, I've been wondering what to make.

We usually have a chippy tea the first night, then find a farm shop and blokey gets nice meat to bbq. I'm veggie so have veggie burgers or bbq'd asparagus, aubergine and things. We've never been for more than 2 or 3 nights though so I need more ideas for when we go for a week.

I was thinking of lots of things with cous cous, or pasta and sauces. We're an awkward family to cook for. I'm veggie but would happily live on cheap packets of veggie spag bol (and have done). Blokey isn't happy unless he's made something nearing Michelin standard. DD just likes to eat whatever is on someone elses plate, even if hers is identical.

Eastern your dh sounds lilke mine,e xcept only when on holiday (boys need dairy free low gluten diets- cooking for them is a chore unless like me you enjoy cooking and have eyuars of experience of what they can eat)

If you like fish, salmon and soy is great. Just fry salmon fillet in a little oil, pour in a bit of soy sauce so the salmon is coated in a sweet and sticky layer and Bob's your uncle. Use the other hob for veg.

I always cook either a chilli, curry, hot-pot or stew the day before (or early that morning at home) and take it with us in plastic dishes. Just re-heat it and serve it with crusty bread. When you have been busy setting everything up its nice to just have to re-head something without hassle on the first night.

brook1 · 14/04/2010 16:37

Sorry, that should be "re-heat" not "rehead".

mushroom risotto
dead easy
you need

1pk risotto rice
1pk dried mushrooms
stock cube
butter
(optional glass of wine)
(optional parmasan)

make some stock with a stock cube and soak the mushrooms for 10 mins
put 25g per person into a pan with a knob of butter and keep stiring, let the butter coat all the rice. keep stiring and add 1/4 of the stock once it is absorbed, add the next 1/4 and glass of wine if you wishand so on until the rice is creamy and aldente
dont overcook it at the end stir in some parmasan

A really tasty easy cheap 1 pan meal and very filling

If there are campfire, take LOADS of foil and basically wrap stuff up in parcels. MAKE SURE YOU DOUBLE WRAP!!

last weekend we di baked camenbert (in box with garlic and herbs) dipped bread and veg sticks in.

Chickn breasts wrapped in bacon

flat mushrooms, garlic herbs and olive oil.

red pepper stuffed with cheese (would do again stuffed with couscous)
