Hi, we’re off camping next weekend and are looking for cold, healthy food ideas that we can pack and take while out and about.

Up to now, we have a mixed bowl planned with olives, cherry toms and beetroot, homemade coleslaw, but that’s it. Any ideas welcome please 😊.

You could cook before you go & this with you. It’s very filling and delicious cold with salad and coleslaw.

John West tuna ‘light lunches’ like these www.tesco.com/groceries/en-GB/products/310695935 They do a whole range of flavours and don’t need to be refrigerated.
Couscous, chickpea and cucumber salad - just make the couscous before you go (it keeps) or make it up with boiled water if you have that facility when you’re camping.
Falafel and humous wraps

No cooking or no reheating? I make chilli/spag bol and freeze it, then heat it on the camping stove.

Tinned peaches and pineapple are transportable. Humous and crudities, crackers with cheese (cool box?)

Cucumber, fennel, apples, oranges, red peppers, avocados, carrots and white cabbage all store well without a fridge and can be easily prepared into a quick salad. Olive oil and vinegar for dressing would also work. Pecans, almonds and pine nuts all add some protein and flavour.

You can get stuffed vine leaves in tins and they're lovely eaten cold (imho!). If you're able to find those you may also see those lovely Greek/Middle Eastern giant beans in tomato sauce, also very good cold. Add olives, falafel, bread, maybe feta chunks, hummus, tomatoes, cucumber, lettuce and peppers, some nice olive oil in a little jar or bottle (old spice jar? I usually keep a few of those to refill but they're also good for small quantities of salad dressing or oil). My idea might be better for your evening meal by the tent rather than carried with you on a hike. For that I'd stick to something very compact, e.g. sandwiches, fruit, cake/biscuits/flapjacks, water/thermos so you can make a hot drink. I hope you have better weather than this weekend!
