I plan to take basics then do a click n collect at local supermarket. Any ideas? Will take first nights done- curry or spag bol. Will do burgers/ hotdogs one night, another pasta meal probably too.

Any kind of pasta meal is usually easy enough.

we also buy the marinaded chicken from Aldi and BBQ that to eat with flavoured couscous (just add hot water) and salad

also deli meats, cheese, olives etc (leftovers useful for packed lunch)

I’ve seen other campers take a slow cooker too but not done it myself.

I’d take 2 nights worth of prepped meals - have one frozen.
Do chicken wraps one night

Vege nachos or tacos - you can use the same bean mix for either.

Meal at the local pub or fish n chips one night

Buy the pancake mix for breakfast one morning

Tagine and couscous
Falafel mix (just add water and then fry]] with flatbreads or pitta bread
Tinned chilli con carne and boil-in-the-bag rice
Tuna arrabiata
Sausages with instant mash
Potato cakes using instant mash

Sachets of microwave rice can be heated in a pan with a splash of water.

Packets of tortilla wraps keep well, and you can make tasty toasted‘quesadillas’ in a frying pan by sandwiching them with cheese / tuna / sweetcorn / adda thin layer of pasta sauce / whatever you fancy.

We usually take a chilli for the first night and transport it frozen and eat it with tortilla chips. I put enough veg in the chilli so that I don't feel guilty.

We have fish & chips in the last night and usually eat out at least once.

DC like pancakes or pain au chocolate for breakfast.

Corned beef hash. Tinned everything (potatoes, peas, carrots) might fry off an onion. Take HP or red cabbage.

Just seen the date on this one. I think the OP might have had her trip by now Wink

Shamelessly bumping for more ideas

We usually do one of chicken fajitas and hot dogs on the first night, and take the other meat frozen for the second night. Then pasta for the third night. If we are staying any longer we will go to a shop to get more supplies. My awkward children don't like most tinned foods (beans, spaghetti, tuna...) so we are a bit limited for longer lasting things. If you take something like a frozen Bolognese or chilli it will last until the third night in a good cool box. We haven't been camping since I turned vegetarian so that will make things more challenging.

I saw someone here mention a ninja and so am bringing mine. I am going to slow cook a chicken, then leave it to rest while I do sweet potato fries, we can have salad with that. It can heat soup for lunch, or slow cook. We normally eat out a couple of times and BBQ, but I think the ninja will be a game changer.

MegBusset · 04/05/2023 20:11

Always pasta one night- tortellini with a stir in sauce and sometimes some pre cooked sausages
Chilli (take frozen) and boil in bag rice
Hot dogs

EyesOnThePies · 04/05/2023 23:02

Burritos.
Tinned chilli (M&S is really good if expensive), microwave sachet of rice (heated quickly in a pan), tortilla wraps keep well, heat over the rice or chilli pan, packet of ready grated cheese. Maybe slice an avocado.

I don’t do EHU, and often cook over the camp fire. You can do loads in a Dutch Pot. Roast or braise a chicken, bake a sponge pudding etc. takes practice, but that’s the fun.
