And also we'll have a decent gas stove!
I'm looking for recipes that are easy but slightly more sophisticated than pasta and sauce or bangers! It's my only holiday so I want the food to be rustic, outdoorsy, ambient, delicious and easy!
OK that's maybe too much, but what do you love cooking and eating in the great outdoors? Four adults (five kids, but 2/5 are fussy and will probably have the pasta without sauce and the bangers!

Someone gave a good breakfast one which I will be copying:

The shake pancake mix in bottles where you add milk and an egg. Lovely as a snack, breakfast of even as a savoury pancake.

Pinterest has loads of ideas - here are 2 in tin foil which is a bit more interesting than a jacket potato :

Also I will be doing scramble ages in a tin foil roasting tray that can be binned !

Can you get a Dutch oven (the cooking kind not the smelly bed :o )? If you can get one of those and can keep a campfire burning low for an extended period you can do all sorts of things which meet your criteria.

SophieofShepherdsBush · 15/06/2017 14:42

Pancake mix also sounds great.

You can do almost anything in a Dutch oven Shock :o

Even breads and cakes, but more usually chillies, pot roasts, casseroles etc

SophieofShepherdsBush · 15/06/2017 14:56

I'll add dutch oven to my list of camping accessories that I want and cant really afford!

There's a website called getoutwiththekids which has some brilliant recipes on it

Our favourite easy camp meal is beans on toast but with chorizo chucked in. Half baked petit pain work great with this. They go all crusty and lovely and you can dip and scoop the yummy barbequey beans. Mmmmmmm.

Thanks spanner I'll check out

Pancakes: Mix dry ingredients in either a 1l plastic milk carton with a lid and handle, or a Ziploc bag, at home before travel. Bring the milk/egg to mix on camp - if bottle, just pour out, if Ziploc, snip off corner to pour. (Ziploc is only for 1 day - bottle could do 2 and be reused once cleaned again).

Pizza on a pan - basic dough, fry on relatively gentle heat on 1 side until golden, turn over and quickly add tomato sauce, toppings that don't need to be "cooked" (eg. cooked chicken, cooked ham, finely sliced onions, tinned corn, pineapple, peppers, olives etc) and top with grated cheese - allow bottom to get golden and cheese to melt.

French toast - 1 egg does roughly 2 slices of bread. Can add a dash of vanilla or cinnamon to the mix.

Diced salmon, smaller diced potatoes, sliced onions, all cooked together in a tin foil parcel with some butter (splash white wine for adults if being posh!), salt and pepper.

camp pizza: wraps with puree, toppings, cheese folded into a square so all toppings covered, wrapped in foil and cooked for a couple of minutes each side in the embers.
Breakfast: camp hash: sliced cooked potatoes (I use tinned), snipped up bacon and sausage, fried together until crispy, top with a fried egg.
fajitas: can be done on griddle or foil trays over fire.
cake mix in scooped out orange skins,
You can do anything in the dutch oven but practice before you go. It's amazing how little charcoal you actually need under and on top to keep everything bubbling along without burning. Last summer we did pot roast chicken with potatoes and then veg in foil packets to steam through. It felt very grown up and formal, carving at the camp table.!

Also, we like to BBQ generally at home (gas, but the principles are the same), and a lot of that can translate to cooking on wood too.

Get a grate/grill, and do meat (steak, burgers, sausages, pork or lamb chops, ribs, chicken joints, fillets of fish, skewers of prawns etc) on that.

Do skewers of vegetables, or use a tin foil tray to cook them smaller and looser. Or wrap in tin foil packets - either mixed or individual (mushrooms are great, or mixed medditeranean style veg like peppers, onion, garlic, mushrooms, courgette and cherry tomatoes).

Corn on the cob straight on the grill.

Spinach leaves wilted in a pan.

Actually, look for ideas for scout camp cooking - they do lots on fires and make it easy for teenagers to do themselves.

You could even learn to cook a cake in an orange or an egg in a potato!

Mymouthgetsmeintrouble · 20/06/2017 13:57

Part baked ciabatta loaf filled with cheese and ham , bit of onion if you like wrapped in foil then bunged on the fire for 5/10 mins i always take a packet of beanfeast bolognaise and a pack of pasta as a back up meal if you cant get out to buy fresh meat

TestTubeTeen · 23/06/2017 21:39

ILookedInTheWater: could you go into more detail about how you cooked your Dutch Oven chicken? Thank you!
And any other good Dutch Oven meals.

ILookedintheWater · 27/06/2017 10:55

@TestTubeTeen Sorry I missed your question.
I used this method (esp the 2:1 coals ratio) and it worked well:
dutch oven cooking

flibflab · 27/06/2017 23:54

Paella is brilliant in a big frying pan on the campfire.

Ineedmorepatience · 29/06/2017 16:26

Hot dogs made with damper bread wrapped round sausages cooked on metal skewers.

Cook the sausages for a while first before you wrap the damper round the outside and finish off, yummy Smile
