camping meals for a diabetic?

dp has type 2 diabetes he is not overweight and is controlled by tablets (if it matters) fat content isnt a big issue but he is only allowed a small portion of carbs per meal and obviously sugar content matters most

obviously noodles and pasta are easy options while camping but as we haveto count carbs and sugar content im lost. does anyone have any ideas?

too much bread as its too many carbs Sad poor dp is starving. the dietician has informed him that his portion of carbs per meal is what he can fit on the palm of his hand after cooking or if its bread its 2 slices

Chicken fajitas with wraps, curry with small amount of rice, burgers/sausages with salad, bacon and eggs :-)

More protein will fill him up, boil up half a dozen eggs and keep them in the coolbox for snacking when everyone else is snacking on biscuits.

What does he eat at home, maybe we can give camping-friendly alternatives to that?

thanks for all the suggestions. well up until last week he ate pasta meals and lots of potatoes and bread as we wernt aware of the carbs being a problem but since our appointment with the dietician we are just trying to find alternatives that will fill him up as he is starving at the moment and feeling like this is torture. i have found some recipes to try on diabetesuk website so we have been trying a few of those but only 1 of those meals is really any good for camping. the last thing we want is for our first camping trip to be a epic fail because dp has a hypo and ends up in hospital

Definitely up the protein if he's starving, it'll cost more but give him more meat/cheese/eggs. What calories he's missing in sugar/carbs will need to be made up in veggies/protein or he's going to get hungry.

Camping food is just home food but without an oven really, anything you'd cook on a hob or a grill can be done outside more or less, so once you've got his diet sorted day-to-day you can adapt it more easily to camping.

(PM me if you want a bit more info on diabetic diets in general, it's a subject I've read a lot about but I do tend to drone on once I get started Blush )

we have finally been given all the information we need about his diabetes (he found out christmas week) we did look online for information but its conflicting information so the dietician was very informative and put the record straight. its just meal ideas we need really with low gi Confused

How about some of these ideas which we use when we go camping? None of us are diabetic, but these are the ones that I think would be the most suitable.

You could make a stew at home and then freeze as a block. This can then be reheated and used as a meal on day 2.

Bacon, eggs and baked beans.

Omelette for breakfast.

BBQ with kebabs made with meats & onions & peppers.

You could make a lentil dhal on a camping stove without too much problem, using red lentils, onion, peppers, carrot & stock.

You could wrap a chicken breast or salmon fillet in a foil parcel along with some sliced vegetables, herbs & olive oil and cook on the BBQ.

Peanut butter & crackers with fruit to snack on.

I'm gluten free - so for me, a bbq is burger with no bun but loads of salad etc or chicken with chorizo wrapped in foil with salad. Low gi, and v tasty.
