We have been camping with family who are avid campers. We are now venturing on our own, me DH, and 2DD. What are you fave and best meals?

Boil pasta
Tin of tuna, tin of sweetcorn, chopped spring onion, tomato and cucumber mix all together with mayo and top with grated cheese.

We always have burgers/bangers in the evening and then fried eggs and sausage patties for breakfast. I like bannock too.

BBQ or a one pot stew cooked on the campfire. Sausages, veg, potatoes and herbs. Serve and grate cheese on the top :-)

ds fave camping meal is, cubed ham with baked beans and grated cheese on top. came across I great campfire cooking website (can't find it now) and I want to try out a recipe I saw. It's a cheesy bean wrap cooked on fire in foil, think it would prob work for cheese toasties too.

Made a nice dinner last time dice tatties blanced then stirfried in butter till crispy with fried eggs from the farm we were on and some beans.... Yummy stodge!!! :)

We always take a frozen chilli for first or second night. It helps to keep the coolbox cold too.

DH makes his Famous Breakfast Mess: sausages, mushrooms and bacon together in a pan with a beaten egg poured over and cooked like an omelette. He pinched it from a Jamie Oliver recipe.

Not so much a meal but a light lunch/ supper!

Melted cheese wraps

Put a tortilla wrap down in a pan to dry fry.

On top place grated cheese and finely chopped spring onions, red pepper and chilli, then place second tortilla on top. Wait until bottom tortilla is browning lightly and filling melted, then turn to brown other side.

Chop into four and serve!

You can change filling to suit but cheese is an essential base to hold everything together. Oh yes and try not to overfill or it will all spill out!

Wrap a whole camembert in foil, stick on fire until gooey in the middle then a chunk of baguette. Mmmmmmm

Mussels in white wine and cream, again with a baguette.

Fajitas always popular and easy..

Chicken biryani.

We pretty much cook just on a fire, bought dh a Bon fire about 3 years ago, don't bother taking a stove now..

Nice one for pudding - take a small tortilla or wrap, spread peanut butter on it, put chopped up marshmallows and small pieces of chocolate inside it, roll it up, wrap in foil and stick on the embers of the fire or barbeque. Wait until the choc and marshmallow is all gooey. Eat, enjoy, and feel sick!

From memory this is. And I cheat at the campfire. Get a Dutch pot. Hang it over the campfire.

Fry off enough chunks of chicken for your hungry friends, Cook it enough to be sealed but not quite all the way through. Put aside.

Get olive oil quite a glug. Fry off onion, I tend to use half to a third of a large onion per person. And garlic, I tend to use a whole bulb whatever the population. I don't chop or crush. Nice subtle flavour this way.

When it's all nice and browned, lift higher from the fire, now is not the time for aggressive heat.

This is the cheat, a couple of major table spoons of patacks biriani paste. Dollop it in ad cook till fragrant. If you have any fresh tomatoes this is the drop them in quartered.

Right now somewhere else get your rice, basmati and seal it by frying ever so lightly. Could could do this in the dutch pot.

Now is the tense bit. Add the rice, the chicken, the onion and garlic mixture altogether. Pour in enough vegetable stock to cover everything With an inch or so of water. Squirt in tomatoe purée.

Lower and boil. Once boiling raise it up again to a v gentle bubble. Lid on don't stir, resist. Give it about 15 mins and check the bite of the rice. Don't stir.

Check again. Add more water if needed. Check until you have the right bite, but it shouldn't take too long. Just before you serve squeeze some lemon or lime. Fresh chopped coriander. Bonzer.
