What do you enjoy cooking while camping? What's a favorite for your family? My minds racing right now with ideas/thoughts...sooo... Go ahead...and I'll be soon to follow!

My camping cookbook I made is of course...in the camper! lol... For me to rattle it off is hard, as so much is just winging it!

For my potatoes: I love to dice them, put them in tin foil, top with corn, onions, mushrooms, lots of seasoning salt, and butter and cook them over the camp grill. Sometimes, I like to swap the seasoning salt with whatever bbq sauce I am using on my steaks/meats....

Fajitas - so quick and easy. And no plates or cutlery needed so hardly any washing up! Also veggie stir fry and noodles. Will try and rack my brains for what else we eat, apart from the obligatory defrosted bolognaise on the first or second night...

Not just camping but on holidays where we have limited cooking facilities, I always do paella once during the holiday. Everything in one pan.

What sort of recipes do you want? I'm a Scout leader and have some good ones that can be done either on Gas or over an open fire, and I am sure we have some other scout and Guide leaders here as well.

To me, camping is a refreshingly nutrition-free zone Smile

Camp Stew: 2 tins meatballs, 2 tins potatoes, 2 tins baked beans, 1 tin peas. Pour meatballs and baked beans into pan, then drain potatoes and peas and add. Heat through. Reasonable for 3/4 greedy people.

If you have anything to drain the peas and potatoes into, then hang onto the fluid and add a bit if the stew seems too dry.

I have been cooking that on a gas stove since I was 8 and got fed up of my dad feeding me on burgers from a van for every meal at music festivals

Camp Pizza

Base

Flour
Baking Powder (about 1 heaped teaspoon to 8oz of flour)
Olive Oil
Salt
Italian-y Herbs if you/your scouts like 'em (basil/oregano etc.,)
Milk/Water (half & half mix)

Topping

Jar of Pasta sauce (you could make your own if you really want!)
Grated cheese
Any other pizza toppings you like

Get big frying pan & a lid to fit on the pan and put the pan on the stove to heat, don't put any oil on the pan. Improvise if you have to! In the past, I've used two frying pans, one on top of the other and once the lid off the burco water boiler!

Put flour, baking powder, pinch salt & herbs (if using) into a bowl & mix well. Drizzle over some olive oil & mix again. Now add your half milk/half water mix, a little at a time, use your (clean!) hand to mix it all together. You are looking to make a soft dough, similar to what you'd use for bread twists.

Gather it all into a nice ball of dough and knead lightly on your floured chopping board, pat/roll it out to fit your frying pan; again you can improvise a jam jar or clean bottle for a rolling pin or just keep patting with the back of your hand. Your base wants to be about 1/2 to 3/4 cm thick.

Once you have it rolled out, get it into your pre-heated frying pan.

Here's a trick to do that; sprinkle some flour over the top of your rolled out dough, fold it gently in half and then half again. You now have a neat triangle that's easy to lift into the frying pan. Then unfold it in the pan.

Clap the lid on top of the frying pan and leave it cook for 5-10 mins. When the underside is nice & brown, turn it over and then put your tom. sauce, cheese, toppings on the cooked side & clap the lid on again. The underside will cook & your cheese etc., will cook & melt nicely as that's happening

pizzas in pitta bread wrapped in foil on the coals are also easy peasy.

Toasted sarnies in a frying pan. ALso crumpets!

Rissotto/paella/jambolaya

Mountain man breakfast - last nights cold potato, fried with onions, peppers, chorizo, bacon, sweetcorn and topped with a fried egg. Tis a thing of beauty that makes grown men cry.

Fajitas

this is totally delicious and one pot.

I can definitely recommend Paella - esp if you burn the bottom of it slightly - mmmmmm

Whole camembert wrapped in foil, left in the fire for 20 mins or so and a fresh bagette - doesn;t really get much better than that!

Cous cous is fab and easy

Nutella in pitta breat heated over the fire

bumping this rather than start a new thread.
I love the ideas here. Someone on a different thread reminded me of dampers.
What other basic staples are there as well as the more adventurous recipes?
My dad always made a ratatouille type sauce to go with whatever might be cooking on the bbq and loads of crusty bread. Would never have eaten it if we weren't on holiday though.
