Can anyone give me some ideas for meals you cook when camping?

We have a touring caravan, so there's a gas hob and small oven/grill, but we prefer to bbq or cook outside on a gas stove, weather permitting.

We're me a veggie and DH and DD who eat virtually anything.

I remember cooking macaroni cheese from scratch half way up a mountain in a howling hailstorm for my camping badge at Guides. Smile
If you're in more temperate conditions how about haloumi and mushroom skewers with a wee bit of pesto on the barbeque, might be nice with some salad and some boiled rice.

Hi Tea I am a veggie camper. I keep it really easy as we have two little ones and a tent with no fridge. Off the top of my head, we tend to take bbq stuff to use quite quickly. A couple of easy meals are: gnocci with tinned olives, green beans and pesto and cheese (our kids love it). I take a bag of pre grated cheese for ease. On our last day I have previously taken some precooked packet rice (Tilda) and added cashew nuts, scrambled eggs (to use up) and any other veg we have. It's not very inspiring but on a camp stove i found that quick is best!

Veggie burgers? Hmm . . . I know, not all that inspirational. How about serving with garlic mushroons, (mushrooms wrapped in foil with lots of garlic butter)- delicious, baked potatoes and corn on the cob.

I always do a shop bought ravioli and ready made sauce for one meal when caravaning, (because I'm on holiday too!)

Ooh we've done haloumi and mushroom skewers before yummy.

Haven't tried garlic mushrooms in foil though, I'll remember that one.

we often make a chilli at home and freeze it...

it then can be an ice block and will defrost and be the dinner for our 2nd night, with rice cooked on stove

or pasta and pasta sauce with a tin of sweet corn mixed in

chicken kebabs with mushrooms and red peppers

the normal sauasage and burgers in a roll with kitchup

I like the idea of taking something frozen, we have a tiny freezer section in the fridge so I'm thinking of freezing tomato and vegetable pasta sauce in bags (brick shapes), one way of making sure we eat some veg while we're away.

Chorizo, tinned tomatoes, tinned cannelini beans (all stuff that doesn't need a fridge) onion, pepper, garlic (or whatever veg we have) with bulgar wheat or couscous. Or pasta.
Any stuff we can find in tortilla wraps (that last for ages and seem unaffected by weather).

One bowl, one pan recipe.
Put a couple of tablespoonfuls of olive oil in a bowl. Add one or two crushed garlic cloves, half a punnet cherry tomaotes cut in quarters, half a wodge of Brie (derinded and chopped up - the only fiddly bit!) and some basil (preferably fresh, but in fact easier dried). Do this in the morning. Do not put in fridge as the idea is that the flavours all melt together and the garlic 'cooks' in the oil. Cook your preferred pasta and once its not too carefully drained, chuck in the mixture. Stir and serve. Even if you think your children won't like e.g. brie the flavour is not strong. Delicious and easy. Amend amount to suit family size/tastes. This would do two adults.

King prawns marinated and then put on skewers for BBQ
Chicken pieces in teriyaki again put on skewers, you could serve in wraps
You can freeze these in the marinades and then they would defrost in your fridge.
Mini new potatoes wrapped in buttered foil and put straight onto BBQ, these are delicious.
Cannot wait to go camping again.Grin

We often have a laksa ,one pot meal.
you can make this with veg ,chicken or prawns. Delicious. Chilli also goodor veggie shepherds type pie . All can be carried along frozen

We don't have a fridge but take a good quality cool bag with us. Most sites will freeze icepacks and more are having a freezer somewhere so you just freeze your own.

We have managed a week with only minimal shopping by changing the ice packs morning and night and leaving the cool bag in the shade during the day.

We take frozen spag bol for the first or second night and usually have a couple of takeaways, check out the nearest town when you are travelling around.

If there is a supermarket nearby we sometimes buy a ready cooked chicken and fresh bread and salad.

And a bbq using disposable bbq's to save space in the car.[sorry not very green are we].

Whatever you decide to eat you will enjoy it because you are outdoors and will be starving.
