Minimalist campers your lists please

We have a Vango Orchy which is great for longer stays, but sometimes we like to go to the coast for a quick overnight camp and beach trip. So only when the weather forecast is good!
It takes us ages to pack to go, set up tent etc all of which eats into the weekend and I was thinking about cutting down a bit and getting a 3 man pop-up for DH and the boys (we have a one man pop-up already for me and dd, who is only 4 months).
What are your absolute essentials? We cook on 2 trangias but I would be delighted to don't mind getting fish and chips instead...

I'm not a minimalist camper, but if going basic for an overnight trip I'd probably take:

  • Pop-up tent that dries easily (e.g. I love my bell, quick to erect, but pointless if it's wet and you have to dry it out at home if it was only for one night)
  • Warm sleeping bags + one extra cheapy in case of nappy malfunction
  • Self inflating mats
  • Mugs & small amount of washing up liquid. Mugs to be used for coffee & wine (not at the same time...)
  • If fires allowed, take paper plates that you can just burn up after you've finished your meal
  • Instant coffee, sugar, coffee creamer (yes, I know not proper coffee, but overnighter is supposed to be roughing it, not?)
  • Wine
  • If fires allowed, marshmallows to grill over flames for luxury
  • Extra dry clothes, especially for dd
  • Money for take-away fish and chips

I love the idea of overnighter beach trip. Am planning on trying it this summer.

I have a feeling the children's teddies count as indispensible.
Also chocolate.
Otherwise that all sounds good...
I may be being optimistic here as 9 month or so old babies are not known for their minimalist packing.
Sun tan cream.
Wash stuff.
May be I should bin the cup of tea-related equipment, it's half my list.

would take packed lunch from home for Saturday and go to shop to get cheese and bread rolls on Sunday.
We've had some great weekends but always seems so much hassle pre and post.
I want to be more spontaneous...
