calories of things like home made coleslaw?

Or things you cannot weigh because you are not at home?

I use the salad buffet bar at work, all the stuff is home made but i'm finding it hard to accurately log my lunches Confused

MFP has a section for entering recipes. If the recipe is online it will upload it otherwise it’s manual entry.
Generally salads and their veggie components are worth almost nothing, 2cups of mixed greens is 20calories. So estimate the additional components. Dressing will be the calorie dense part.

I use the app YAZIO which is similar to MFP. It also offers the possibility to enter and save your own recipes and I use this feature quite often actually. By now I have most of my favorite recipes saved in the app already.
When I eat out I usually try to enter all the ingredients and estimate the weight of each ingredient. I usually log a bit more than I actually think it is to be on the safe side. But it's definitely difficult! But estimating gets easier over time!

Carbs and Cals is a good app (there’s a book too). I use it for carb counting as a type 1 diabetic but it has calories etc too. As well as weights it give you a visual of portion sizes of different foods, I find this makes it easier to estimate.
