Tell me your best sub 300 calorie (vegetarian) meals?

Please can you tell me your best meals which are under 300 calories and either vegetarian or easily convertible to vegetarian?

So far I've just got salad with minimal dressing, konjac noodles with stir fry veg, konjac pasta with tomato & vegetable sauce.

Tell me more!

Are eggs ok? Scrambled with spinach and mushroom, shakshouka, pea and feta frittata.

Potatoes Boulangere - but there's no way that would serve 8, serve 4 maybe and that makes it just under 300 calories.

2 egg omelette with herbs and mushrooms - about 200 calories including the fat you fry it in. Add a salad to bulk it out a bit.

VAST pile of spinach leaves with 2 tblspn toasted pumpkin seeds, 1 hard boiled egg sliced in and a few olives, dressed with plenty of balsamic vinegar.

A can of Heinz Tomato Soup with half a toasted bagel.

Shred and boil some green cabbage until just tender. Heat some oil in a wok, cook some cumin seeds in the oil, drain the cabbage and stir fry it in the oil. Chop a veggie frankfurter or sausage over the cabbage.

Small can Heinz Macaroni Cheese with grated carrot salad and broccoli.
(I honestly don't work for Heinz).

Cook a couple of frozen coley portions in the microwave while 100g of egg noodles is cooking according to the packet. Stir fry the coley and noodles with some red pepper.

Hm, I think the problem may be that I like to eat high calorie foods, rather than that sub 300 per meal is hard!

I did forget to mention, anyone got any ideas for crispy / crunchy / dry textured foods that would come in at under 300 calls? Sometimes I get so fed up of eating wet / sloppy foods (though these seem to be lower calorie in general!)

Roast sweet potato wedges might be good if you cook them at a higher temperature to give them a bit of crispness. I add paprika and cayenne pepper to mine.

Drain a can of chickpeas, put them on a baking tray with a little bit of veg oil and shake over some paprika or cumin. Roast til they're crunchy. Alright, it's not a meal but it's a bloody lovely snack! I suppose you could put them over a salad with some other bits?

I refer you back to the toasted pumpkin seeds (shake pumpkin seeds into a dry frying pan and heat until they start to crack). Crunchy n nice. ABout 60 calories per tablespoon.

Salty popcorn. Even popped with oil it's OK for calories.

Slice of toast with butter and marmite. TBH this is fairly easy - the trouble is I don't want one slice, I want four and that does take you over 300 calories by a factor of 2

3 tesco value falafels
Spread of hummus
Spring onion and leaves
Comes in at under 300 and is very filling and tasty Smile

Ratatouille with eggs cracked on top. Bake in the oven for 30 mins or until eggs are firm. Yum!

For my lunch today, I had a folded flatbread (comes in pack of 6 from sainsburys), which was 97cal, stuffed with half a packet of Jamie Oliver spiced chickpeas and grains, which was 160cal for the half pack. The packets are in the aisle where you get the flavoured couscous, etc. It was really filling. You could add in some salad as well.

Yum, red lentil, chickpea, coriander soup, 222 cal per portion. Very lovely. Ready in less than 30 mins.

Sainsbury's 3 bean soup. Omelette. Stir fry without noodles, but with bits of quorn instead. Pack of veg with a bit of cheese melted on top.

Have you tried substituting white carbs for wholewheat/grain? I like wholewheat pasta with chicken or tuna and extra light mayo. I also have wholegrain rice and chicken. Sometimes I make wholewheat noodles with a light sauce, chicken and veg stir fry - really easy and quick to make the night before work.

Sorry, I realised that you asked for veggie. You can use quorn or just veggies in the above dishes! Also, wholewheat pittas and wraps are yummy!
