Having trouble eating all my calories on MFP

Have been using MFP for about 6 weeks now and lost 19 lbs, which I'm obviously very happy about. As I'm breastfeeding I've given myself 1400 and am having trouble eating all of them.

I'm also doing the Charlotte Crosby DVD 3 times a week when I do it and 'earn ' an extra 400 calories them and have an even bigger job eating them.

I've given up sugar too so am not snacking on rubbish and eat lots of vegetables and chicken, pasta and roast meals.

What should I be eating, can anyone give me a sample menu.

How far off 1400 cals are you? If it is within 50/100 cals I wouldn't worry too much. I would also look at the nutritional breakdown and see if you are low in any particular are and plan to eat a snack to compensate that area eg calcium - glass of milk or slice of cheese.

I'm struggling to reach 1200, I've had a look at the nutrition bit and I'm a bit low on calcium but don't like dairy stuff so need other ways of boasting vitamins and minerals, I'm eating a lot of veggies.

How about boosting your fat with stuff like avocado, smoked salmon or cheese? Having some homemade guacamole on the side of a Mexican type meal, or an avacado and chicken salad should give your calories a bit of a boost. And the Sains 120g packs of smoked salmon are about 230 calories, I think, so a smoked salmon salad with some cheese could quite easily get you to a 500 calorie lunch.

Cheese is obvious! M&S do these little 30g portions of cheese that are good for snacks and boost you by about 100 calories each time. Or a halloumi salad with tomatoes and beetroot, even with some bacon? Or a mozzarella, tomato and avocado salad?

A big sweet potato with some caramalised onions, goats cheese (or cottage cheese) and bacon is tasty.

Or maybe sausages on top of creamed leeks (can do with low fat creme fraiche if you want) for a high fat/low carb option.

Almond butter is also really healthy and packs a decent calorie whack. Almond butter spread thickly on a banana cut lengthways could easily be a 250 calorie snack. Or even something like a healthy homemade Pad Thai, with 5 calorie miracle noodles or courgetti to keep the carbs down will be 400-500 calories with the peanuts in the sauce.

If you're eating fruit, dried fruit and nuts will boost you too. Maybe a Graze box if you struggle to be inspired by snacks?
