What would you eat on a 2000cal a day plan?

I'm breastfeeding a 4mo and want to regulate my eating because I have a tendency to eat through boredom, to get energy to look after my 3yo, because food is there...etc etc!

I am pretty hungry from bfing so can't cut down to a low calorie amount and I don't want to low carb right now. I don't think I have a very good idea of what a 'normal' amount of food in a day looks like so since 2000cal is the average amount an average women needs (and I know lots of women eat less than this and it varies massively between individuals) I just wondered if I could get some ideas about what this would actually equate to in terms of meals?

So if you were aiming for 2000cal a day, what would you eat? I'd really appreciate some ideas!

Personally:

Breakfast- egg and bacon roll and a 12oz skim milk latte

Lunch - large mixed salad ( spinach, rocket, tomato, cucumber, olives, mushroom, onion, broccoli) with egg and lentils, some miso soup and some raspberries( one of those square supermarket containers).

Dinner- chicken or fish with salad or veggies. Sometimes spag Bol or chili.

Usually have a glass of wine.

Say you aim for about 5-600 calories per meal x 3, and another 200 or so in snacks throughout if you're that way inclined, that might look like:

Breakfast: Spinach and ham omelette with a slice of toast, lightly buttered

Lunch: Large vegetable stir fry with egg noodles and a piece of fruit

Dinner: Chicken and avocado salad and a handful of nuts

Mid-morning and mid-afternoon extras could be fruit, fresh or dried, or nuts. (They're a bit dangerous for me as I'm liable to overeat them, but something like edamame beans make a really good snack too...)

Any of that appeal??

Sorry, just read bunting's and realised my suggestion is actually very similar. I haven't helped very much!

Both the above suggestions are very healthy, but to me look like 1500 calories max. Maybe add some starchy veg to the evening meal to top it up a bit? Fish or chicken salad is only about 300 cals (the way I make it anyway: unless it's a posh salad Grin)

Maybe I go overboard with salad but I can easily make one add up to 600 calories. In fact I did that yesterday (god I love MFP!)

The main bits were the chicken, avocado, parma ham, houmous and an olive oil & balsamic dressing. The rest of it - lettuce, cucumber, olives, tomatoes etc doesn't add up to much, you're right. I was hungry though...

Also, full disclosure - I might have had a small slice of lemon drizzle cake with lunch. That counts as fruit, right Grin
