Fussy at breast

I apologise if this has been over done.
I have an 11 week old baby, exclusively breast fed. He was fine until about 5 weeks when I believe he had colic and cried inconsolably for about 3 weeks before it improved.
8-9 weeks he was actually really good and a lot more settled.
Over the last week he has become fussy again. Usually after about 10-15 mins of breast feeding he will come off and start to cry. During the feed I can also hear him gulping air which is horrible. Sometimes he burps himself and this makes him cry too. He will rarely go back on. He can cry for 10-15 mins. I’m then able to put him down on his play mat and he’s happy for about 15-30 mins. Also happy during nappy change. Then suddenly he starts to scream again and this can last between 10-30 minutes before he settles and usually sleeps. He may burp more at this point. He rarely brings up milk but does sometimes. Not always in distress when he does so.
He used to bf for 20 mins. I was worried maybe he’s not getting enough milk but he’s gaining weight along his centile and is still having normal wet and dirty nappies. His poo is normal bf poo (mustard) and he doesn’t have any rashes. He’s also hitting development milestones.
The other thing is he’s always clicked when he breast feeds. So I think he swallows air. He had tongue tie release which didn’t make any difference about 3 weeks ago.

He sleeps with his bed inclined at one side and sleeps 3-4 hour stretches at a time, but does draw his legs up a lot.

I was wondering if anyone else has had similar experiences and how it went? Is he just being fussy/over tired or is it wind/reflux? Especially as he does settle after crying after a feed and then restarts.
Maybe the wind is making the reflux worse? We’ve tried gaviscon, not really helped. Tried gripe water, infacol (makes reflux worse) and now trying colief.
We have been prescribed omeprazole but I feel bad medicating him if it’s not needed and especially if it may make him worse before better.

I know babies improve a lot in terms of their crying by 3 months and I’m wondering if this will be the case even if it’s related to feeding?

Its just really hard when your baby appears to be in so much pain.

Any other tips would be welcome as well :)

I was also thinking do I go down the CMPA route but apart from silent reflux/wind he doesn’t have any other symptoms
