Wind making breastfeeding difficult

I've posted here recently about breastfeeding and got some really helpful advice and my DS son went from 7lb 9oz at birth to 10lb 2oz at just over 4 weeks which I was really proud of and it gave loads of confidence about carrying on breastfeeding.
Now he seems to have developed or be suffering with trapped wind. He struggles to burp and fart and we have been giving him infacol and it seems to have helped but whereas before I/he was able to have one breast, I would change him and then he would take the other breast, now I'm not able to do that because it has become a whole ordeal this wind thing.
He would have one breast and come off sometimes upset/uncomfortable (before, he would come off more peacefully) like he's already has wind not making it comfortable for him to keep sucking, and I would burp him which he would do straight away but he would carry on complaining, like not all the wind has come out. I would carry on winding him, eventually he would burp again and would bring up some milk, not a huge amount. I would try and put him back and he would not take the breast. He would eventually calmed down, and I would try again but he would not take the breast.
I'm just worry he's not feeding enough.
My breasts are nice and 'empty' like they're not engorged from him not being able to empty them. Sometimes I can tell if they're a little bit hard, after he's been feeding they're much softer. I feed on demand and always feed him when he wants to.
I called the HV and asked her if I should wake him or feed him when he's asleep to make up for what I think was a poor feed but she said no.
The odd time I've expressed some milk (I believe I have generous supply as I can handexpress between 50-100ml fairly quickly) and topped him up because I'm worried about him not getting enough. He would take anything from 40-80ml.
It's not always that wind bothers him in all feedings but it's often. Today I felt like he felt lighter when I picked him up but it could be my arms are getting stronger from all the carrying and winding lol.
He is 5 weeks and 2 days. Plenty of dirty and wet nappies and very alert. He would feed every 1.5 or 2.5 hours max but last night he went 3 and half hours without a feed which I was incredibly grateful for (needed the sleep) but worried me that maybe he didn't have the energy to wake up earlier as after that feed, which was a good one, he woke up 2 hours later which is more his usual self.
Am I overthinking this?

I used infacol with dd and it wasn't any use. When she was a month old I started using gripe water which was brillant, and used a sterilised infacol bottle to give it. After that, I had no more problems.

The thing with babies is just when they fall into their own routine they then change it all up. Everything sounds fine take it easy and go with the flow. He's still really young and will at times sleep for longer periods as this is when he's growing.

For the wind have you tried exercising his legs?
Pop him on a mat and remove his nappy. Then hold his ankles and move his legs in a bicycle motion. This will help the wind move.
