toddler tea time

I'm looking for ideas for things to give my almost two year old. We always used to have tea altogether and he'd have whatever we were having, but recently he's been really tired in the evenings so we've decided to move up bedtime, so we have to move up tea time, bath time etc etc... Meaning he's having tea around half 5 instead of 6, before dh gets home from work, so I need to think of things I can make for just him.

So far, I've done:

Mini pitta pizzas
Spaghetti bolognese (bulk made and in the freezer!)
Fish fingers, mash and beans
Sausage, mash, peas and carrots
Boiled egg, soldiers and veg
Jacket potato, beans and cheese

He doesn't eat chicken - I keep trying but he never eats it... Has anyone got any ideas please?

Can you hold back a portion of whatever you and Dh have for dinner and he can have it the next day to save you cooking twice? Dd always eats early as she's in bed by. 6.30 so this is what we do for her most of the time.

I make some tomato pasta sauce and freeze it in ice cubes - three is good for a pasta sauce, one for each side of an English muffin pizza. I often add things to the pasta sauce like sausage, chicken or prawns to make it a bit different. Also macaroni cheese, fish pie, pasta bake and cottage/shepherd's pie frozen in ramekins!

Hummus, pitta bread, salad bits
Quiche
Tuna hash (tuna, mashed potato, sweet corn, cheese all mixed up and makes in the oven - although you could probably just dry fry it in a non stick pan maybe with a splash of milk). This is devoured instantly by my twins
Gnocchi - with pesto and peas, with tomato sauce or with Philly and chopped fresh tomatoes

I find pancakes quite easy especially if we're eating separately - then use the rest of the batter later to make pancakes for us.

PS mine likes spinach and cream cheese as a filling.
