Share your favorite rice recipe

Hey all,
I'm doing Tandoori chicken this week, I usually cook a load of the meat up at once and spread it over a few meals. However - I'm never great at the rice counterpart - I like my rice to be nice and flavoursome, so can I please ask you to share your favorite rice recipe and of course, the method of cooking!

I'd say rice and peas (beans) is my favourite but one that I made up recently to go with a curry and which may go well with your tandoori is quick and simple.
Boil rice with turmeric (1 tsp for 4 cups of rice), salt and a stick of cinnamon and a cup of garden peas. Add everything while the water is boiling and give a good stir before turning down the heat to simmer.
Flavoursome and quick!

Thanks Maggie - this sounds really quick and simple - and delicious! I'll give it a go. I do like peas with rice and might also try some fried mushrooms.

I'd love some easy Asian curry recipes. I look dthis up two years ago as wanted to go veggie for lent. They had about a gazillion ingredients and spices. Seriously, almost nothing I had in my cupboard and nearly half an hour trying to find it in the local Indian cash and carry.
Does anyone have some recipes that are easy, please?! Please!

I have a basic curry recipe that works for veggie or meat. I have never really experimented with curry pastes/ingredients so I suppose you could alter as you wish and add spices.
- fry off a finely chopped onion in 2 tbsp oil until soft
- add 3 cloves finely chopped garlic +
- a thumb joint of grated ginger +
- chopped chilli according to heat desired
- after a few mins add 2 tsp turmeric +
- 1 tsp cumin +
- 1 tsp salt +
- 800 ml boiling water +
- 3 medium sized potatoes cubed +
- a cinnamon stick, few cardamom pods, a star anise - optional if you like these flavours
simmer for about 10 mins until potatoes starting to soften +
- 150 g red lentils - cook on medium flame for about 20 mins, stirring occasionally, until thickened or depending on how loose you like the texture (I prefer it to be loose enough to be able to sop up naan and will add water accordingly). Ensure the potatoes are cooked at the end; add salt to taste if needed
Experiment with flavours, add coconut milk, garam masala, whatever you like or replace the lentils with chicken or other meat!
