I think I'm going to take a stab at this Trini corn soup tomorrow evening: www.homemadezagat.com/2017/02/traditional-trinidad-corn-soup.html. I'll likely add chicken wings to it and omit the dumplings to make it less carby. I remember my mum making something similar when I was little.

I have a leftover roasted chicken that I can strip the breast meat off it and use the carcass to make chicken stock with first. I'll do my shopping tomorrow afternoon and see if I can get some shado beni (aka culantro) in the neigbhourhood.

I’ve got some oxtail in the freezer so it will be stewed oxtail with rice and peas I think.

Mac and cheese tonight / jerk ribs and rum cheesecake tomorrow. It’s very carb heavy but I want to start keto Monday so trying to use up the last of my pasta.

Oxtail stew tomorrow. And made some corn melon soup (umxhanxa) earlier today...delicious and all gone down my big fat belly 😄😊😄

My friend from East Africa has just taught me how to make chapati and I’m loving it. So will be making it tomorrow.

I’ve got all my ingredients for the soup. I’ll be making stock tonight. I also want to roast some elderly veg that’s at the bottom of my fridge so I can use it in salad bowls.

I did chapatis this week and they weren't brilliant - I used all atta and they were a bit dense. Need to work on my technique to get a softer doughier effect.

Jings the corn soup looks great, especially now the weather has dropped.

I'll be doing a big pot of soup for lunches in the week. Tomorrow I'm doing fried chicken burgers

@pompom use hot water instead of warm water to get the doughy effect
It half cooks it too. And don't over knead it becuase it will become elastic like.

I really fancy some curry goat but goat meat is hard to source in Reading. I know you can use lamb, but does anyone know what cut is best to use, please? Thanks, hungry in Berkshire 😁

@ILOVERUM lamb shoulder or leg would be good for curry. Even if you can get lamb steaks (usually cut from the shoulder anyway), that would be fine too.

Lord, it tastes good. I omitted the dumplings to save on carbs. I added chicken wings to have extra protein and used red lentils because I didn’t have yellow split peas but it still tastes wonderful. This will see me in stead for the rest of the week and more for the freezer. And just enough scotch bonnet pepper. It’s perfect for the weather right now!

Let me tell y’all... the way I just sucked the marrow out of that chicken bonnnnnnnne... it felt like HOME. 😂

Definitely try this recipe if you can!

@JingsMahBucket Shock that looks amazing, and now I'm hungry Envy. I'm not controlled enough to omit any kinds of dumpling. I've been known to add both English and Caribbean dumplings to the same pot Grin

I, too, have zero dumpling control. I blame my father, who wandered the lands of North London in March, searching for flour so his Saturday pot of soup would never lack dumplings Grin

LMAO at “no dumpling control”! 😂 @AMemeByAnyOtherName what do the English dumplings look like? I’m over in the US but have (loose) ties to the UK via my parents.

@JayDot500 on that same site the author has a post about Saturday soups! The recipe she added to that post was cow foot soup with added pigtails. Made me miss pig tails SO bad.

A couple more notes about the soup: I don’t like sweet potato in soups because I prefer my soups savoury versus sweet so I subbed it out for white potato. I also didn’t have any green seasoning to add at the end because I didn’t read that far when originally shipping for the recipe due to excitement. Grin It still tastes great without it so don’t be put off if you don’t have it. I also used one whole scotch bonnet but only half the seeds from the pepper. It still has a good subtle kick and leaves room for extra spice when I get a bottle of green seasoning later this week.

I was showing it to one of my White best friends and she said OMG because whenever they go to USVI for vacation, the neighbour they have there is a Trini woman and she served them this exact same soup!! Total coincidence! I asked her if she wanted me to make some for her and wholeheartedly said yes. I’m going to make a vegetarian batch for her later this week since I need to use up the shado beni anyway and the soup is cheap to make. I just need to get more corn and potato. I’ll make my own veg stock for extra flavour versus buying boxed veg stock.

I’m out running errands this morning but I can’t wait to come home to this soup for this afternoon. :)

My own grandmother used to cook with pig tails, also pigs trotters, I used to suck them like that! You reminded me!
She was Irish living in England. That was 1950s to 1970s.
She and my grandfather mostly brought me up, so I'm really enjoying reading these recipes. Definitely making this soup.Smile

Thanks for that link @PonDeReplay. I foolishly gave away my food processor so I don’t have a way to make the jerk seasoning but I think I may pick up some Walkerswood jerk seasoning and cubed pork shoulder and give that recipe a whirl.
