Fussy eater 2.9 yrs

Hi I have one fussy eater.
Currently he is going through a phase of eating lots of carbohydrates.
He'll eat oatcakes, creamcrackers, gingerbiscuits, krisprolls, etc
cereals etc
But not much fruit or veg.
He will eat chicken or turkey with breadcrumbs on, he knows what it is, but he says bread when he sees the breadcrumbs.
He drinks all sorts of juice, milk, even some water.
He likes yoghurt but I've been gradually increasing a blend of his petits filous with natural greek style yoghurt to reduce the sugar content!? Is it worth it? Is this making his diet better?
Sometimes I slip bits of veg into his spaghetti hoops.
I offer him loads of types of food but he knows what he will or wont eat.
Sometimes he will eat an apple or rarely a banana.
I'm trying to peel and blend grapes into his yoghurt today!
He eats my homemade cakes too.
What else can I do to sneak some vitamins into his limited diet?

Smoothies?
Will he eat cream cheese? - I mash a bit of avocado into cream cheese for my very fussy DS - he would never eat avocado normally.
Will he eat pizza? - Make your own tomato sauce for the base and blend in some veggies.
Fruit crumble with apples and berries of some sort - the fruit is quite disguised by the crumbly bit.
Jelly with fruit set into it.
Veg sticks with a dip (hummus/cheese etc) - my DS likes it when he has lots of little pots of things - must be the novelty value.
Will he eat pasta? You could blend some veggies into the pasta sauce as with pizza.
I also make sure that as my DS is so fussy that what he does eat is extra healthy - so for example as bread and peanut butter are 2 of his favorite things I buy really good whole meal bread and nice organic no sugar peanut butter. Good luck!

Yes the pizza might work! I think that is something worth trying... He needs to build up an appetite and he might eat it. Fingers crossed.
