how do you deal with the really irrational toddler tantrums?

My ds is 2.10 and is, shall we say, spirited. He's very prone to tantrums. I'm OK, I think, at dealing with the ones that arise when I'm stopping some sort of unacceptable behaviour, slapping and so on, as I feel on quite solid ground with them. Firm voice, no hitting and moving him away if necessary.

It's the tantrums that come out of left field that throw me. For example, today, he threw the most awful, kicking, screaming "go awaaaaay" tantrum as we were getting on the tube, because it was a red train, and he wanted to get on a blue one, (I presume like Thomas). It was horrible, an enclosed space, he was screaming like a banshee and all the other passengers were pointedly tutting or moving away. (Oh, it felt vile).

But I don't how to deal with that - I just feel a bit bemused, I can't reason with him. What he wants is irrational and odd. Anyone else have a kid that does that? And how do you deal?
