Help with healthy quick child friendly meals especially at the moment

Long story, which I have already made a post about, other details too, but will be too long to put here.
But having a difficult time at the moment with DS 8. Housing issues etc too. So with the stresses and the current heat.
It’s another hassle having to think what to make daily. I am no big cook lol, have done posts before.
Where it was really hot i wasn’t going to say no to certain things if it got something in to him at least.

I am supposed to be trying to continue with weight loss. And also because of weight issues and bowel issues when I cut back/out on white carbs/wheat flour etc, it helped quite a lot.

Everything feels a big effort at the moment. I see things online and think okay healthy quite quick, then I think oh DS won’t eat it.
Trying to keep things simple at the moment. Especially as there are sleep issues and I am shattered too.

But don’t want to result to eating rubbish all the time.

Any ideas/suggestions, particularly from parents who have children going through or been through difficult times. Will be greatfully received.

Hidden veg pasta sauce goes down well with my fussy toddler. There are lots of different recipes online, I make one with red pepper, carrots, onion and celery - add in chopped tomatoes and some cheese. You can make a big batch and freeze

Make a list of what your child likes so they are fed and hopefully you can eat same or adapt it?

It might be useful to know what your 8yo likes - junk food wise - so we can come up with healthy & easy alternatives?

I’ve been making sure that snacks are giving moisture so grapes, satsumas, melon to boost hydration. If you keep them in the fridge all the better. All healthy and no processed carbs.

Thankyou, yes I took grapes straight from the fridge yesterday for after school.

My go to was fried rice. You can cook a large volume of rice and freeze in batches (always fry from cold). Keep diced cooked meat in freezer. Then on the day scramble some eggs, fry the meat, peas, sweetcorn, chopped mushrooms or any combination of small/chopped veg, throw in the rice and heat through. Splash of soy sauce, lovely!

For you, you could increase the veg, reduce rice.

Yes I do hear about Taco’s or Burritos are they the same thing?
Is something fun to do too.

I have done this a few times. Carbs I can not say I do not eat lol, as I have them and too much/wrong things. But issues there with food, and as far as I know probably insulin resistance because of PCOS, plus I have fatty liver. So one thing can cause the other, or worsen it, with weight and hunger/the way your body deals with food etc.

He likes burgers etc do we will get McDonald’s usually as a day not to cook something once a week. He will go for sweet things. Nuggets and fish coated the fish is not too bad. But these are things I could try to make myself.

Was good that recently he asked for jacket potato as they had it at school.
So had beans and cheese on top with salad on the side.
