Meal ideas for fussy eater (ginger foods)

Hello, my daughter is 2 and a half and most likely on the spectrum (being assessed)

she is a terrible eater and it's gotten to the point I'm concerned for her health. She will only eat beige. Breakfast rolls, chocolate filled crepes, crisps biscuits, chips, toast.

she's getting basically 0 nutrition and I'm very worried, it's been going on for a while.

I've decided that this week coming up I'm going to be very strict with her food. Only give her things she wouldn't usually consider. But when I give her fruit and veg usually with something else she will eat she will ignore the fruit and veg and just eat the toast or the chips.

so is it bad of me to offer her only healthy food for 5 days. I don't want to starve her but I can't think of any other way to do it, she will happily skip a meal if she dosnt like it so it
would have to be a whole day at least for her to give in and try something else.

im sure this makes no sense. I'm basically asking for tips and meal ideas. Avoiding beige if possible

I've read that and it sounds bad, my thought process is that if for 5 days mon-fri I give her new foods she's never liked or tried before for breakfast lunch and dinner and limit her to 1 snack a day im
hoping she will try something new and like it and kind of expand her choices a bit, if healthy new foods are the only option I'm hoping she will try it, for example at the moment she dosnt eat dinner full stop. If we're having spaghetti bolognaise she will have a yogurt, baby biscuits, crisps and a fruit smoothie. It's awful and I feel terrible about it but it's either that or she dosnt eat at all and I'm at a loss
