Son 9 started eating differently

My son age 9 has a few quirky habits. A new one emerged in the last couple of weeks where he has started to eat all of one food on his plate first. Then when it's finished he will eat another, and so on. Such as with potatoes, beans and sausages. Will eat every bean, then all potato then sausages. Asking him about it, he gave an explanation that it was faster to eat but I don't think he can articulate it.
Is there a name for doing that? It is in addition to other OCD type behaviors and I'm having trouble knowing what to look up Google.
And do we ignore, or leave it hoping it runs its course?

My husband eats like that, and he's 28.
Apparently he's been doing it since he was a child. He has no ocd tendencies or anything like that, it's just a weird quirk he has.

I dont unerstand it at all! But I don't want to draw attention to it either. He also has a tick of rubbing his eyes. I ignore but it's sticking. I really don't want him to be eating like that at 28!

I've never understood it really, but there's no harm to it.
I think if you have any concerns then bring it up to your go, who can refer to a paediatrician if necessary. However I definitely wouldn't bring attention to it, just try and encourage him to mix foods if it's bothering you that much.

If that's how he likes to eat then it's fine surely? Even when he's 28! I don't think there is a hierarchy in terms of which food you eat when is there? People who eat a bit of each are not better than people who don't! As long as his table manners are ok and he eats a range of food, the order in which he eats it is up to him.

This. As I stated above it, if there are other factors bothering you then seek guidance. But there really is no harm in how he eats. It hasn't affected my husband in any way shape or form, he's 6ft5, healthy, intelligent etc. It really is just his one little quirk in life.

I can understand its concerning as you've said it runs alongside other OCD type behaviours but on it's own I wouldn't see it as a big deal. Both my ex and my current partner eat like this. I'd never known anyone like it before so I found it really strange but it was normal for them. And eventually I learned to not notice it anymore lol.
If none of these 'quirks' are bothering him at present I would say it's best to ignore and let him get on, I'd only be concerned if it was impacting day to day things etc 🙂
