I have a good friend who is - she goes to NY for the new moon every month and dances at firecircles etc - I think dshes a priestess? does that sound right?

Yes, but different style of craft to mine. She sounds like she works with others, probably in a coven. I am a Solitary and work alone so no Priests/Priestesses for me.

I left organised religion behind when I chose Paganism so I don't want to return to it by having people like Priestesses in authority over me.

I have worked in a coven before and found it too draining. I work better alone. Besides, my religion is between me and the spirits - I don't feel the need to share it with others.
