He has never spat anything out of his mouth and lately every time I try to give him foods he doesnt like taste/texture he will moan and cry holding the food in his mouth. Offering more food (even naughty choc), drink, distraction with toys/tv, showing him how to spit etc doesnt work. After half an hour he has so much saliva in his mouth that he starts choking when he's trying to cry and not to swallow, so I have to struggle to get a finger in his mouth and hook out the food, which he also fights against. (Then huge tears after as if traumatised).
Is there something wrong with him?

(he's not talking yet either, tries occasionally to say 'ta' but usually sounds like 'da')

How old is he?

The person you should speak to is your health visitor. I don't know what kind of relationship you have with yours. Let her/him see if you think there is anything wrong.

It could be any number of small things and then again just developmental.

My son is 8 months (last of 4). He can't spit out yet and the only word he says is Da Da Da.

He might have an ulcer. Any food is painful - and who wants a finger in a sore mouth? (My 1st suffered with them and we had to eliminate OJ from her diet and tomatoes. Even too much sugar (chocolate) hurt when she had an ulcer.)

Same with teething really - which can happen throughout their lives.

It could also be a tantrum. A way of manipulating you so he doesn't have to eat the foods he doesn't like!

Or a phobia.

don't panic and jump to conclusions. We all worry, especially when our children are distressed.
