Dd1 has started on the why questions again. Is this normal for a nearly 8yr old?

Why can't penguins fly?
Why does ds do x, y, z?
Why are bananas yellow?
Why are baby wipes wet?
Etc etc etc?

Just why?

this is a kid who wants to know stuff, an inquiring mind can only be a good thing, it's not always easy but this could be a really good thing, as dd1 will want to find out more and be smarter as a result.

Yep, it's an age thing. I teach Y2, it's a constant why? why? and challenging boundaries.

Its hard to explain some of the things in an age appropriate way though.

Not sure about how much detail she wants in an answer, and "why do you think" doesn't work.

Get her an encyclopedia, or show her how to use google! I was the same and would sit reading the encyclopedia for hours :)
