William or Peter, depending on which sounds better with the chosen first name. Maybe even both.

I would always give a family name(s) in the middle name slot rather than a 'just because' name, personally, but each to their own.

Peter. We all have family names as middle names. This is the only male family name not used that I like.

Falcon.

Every since I learned that this was the middle name of Scott of the Antarctic I have thought it is a brilliant middle name, partly because of the Scott story which I think is a great story to tell a child, but also because it is a bit of a surprise, quite fun, and falcons are amazing!
