I wouldn’t hyphen though and would use full names. Known as Frankie to you.

Franklin Joseph would be my pick.

but I don’t hear Frankie Joe as hillbilly at all, it sounds like a swing name to me!

I've an uncle Frank, middle name Joseph. They're both lovely names and Frankie-Joe is cute, but I can't see it carrying through to adulthood. (He would of course have lots of options with his name as adulthood approached though.)
