What could It be short for? No baby on the horizon I just had seen it online and thought it was cute and wondered what the ladies full name may be. Evangeline maybe?

Would be cute unless she was a bit podgy! It's not the most intuitive nickname and would probably be dropped early and not be used out of immediate family, so it could could be for anything really. Anything with a J sound would work: Georgiana, Giselle, Imogen, Jessamine. Angelica and Angelina are probably best though.

I thought you were being silly. But actually I love Jellie. It's unusual. Has an easy spelling. Is notice to say. I probably wouldn't spell it Jelly. And I wouldn't look for a longer name either.

If you’re just going to call her Jelly short for anything why bother picking a name with a j sound and trying to force Jelly as a shortening? Jelly is about as naturally short for Georgiana as it is for Amelia. In that case rather than trying to force some tenuous link why not just choose a name you actually like and tell people she’s ‘Jelly, short for Katherine.’
