Of your list, Josiah and Micah are my favourite. Unusual, but not impossible to spell and can both be shortened to more normal nicknames (Joe, Mike) if that's what they want.

I love Ephraim. That was my grandfather's name and he was a lovely man. His name was Ephraim Joseph.
