gone from gluten sensitive to allergies - worried

I've had IBS for over 20 years, worse during perimenopause so went (self-diagnosis)GF after I got inflamed after alot of pizza about 5 years ago. My symptoms massively improved. I was healthy for first time in years but I never felt panic in restaurants and could handle it, if I ate a little bit by accident for example, it was always digestive issues. Then got Covid(had breathing issues w/it), with long covid symptoms then had antibiotics and a number of nasty viral infections this year.
And I now have chest pain, throat tightening and joint pain when I accidentally eat a teeny bit of barley. And my blood liver results are suddenly rocketing so it looks like I have start of liver disease. So yes, I've been to GPs with chest pain and am getting looked at for Sjogrens.
But I'm having to figure out my diet myself as they're not interested and I'm not diagnosed as having food issues as I've cut gluten myself. I think I've now got soy issues so need to cut that and see.
But I'm now terrified of restaurants/friends cooking. As the issues are no longer diarrhoea following day but chest pain/joint pain.
I don't want to limit my life.
But I also don't want to feel like I'm having a heart attack if I eat gluten/soy by accident. Does this just get worse by age? Do people just increase the food items they can't eat? Is it usual to go from digestive issues to chest/joint/throat issues as you age?
And any success stories? Anyone calm their immunity enough to lessen their immune response after a year of viral infections? I exercise a lot and barely drink alcohol so I'm running out of options as to how to improve things.

Yes sadly diet and nutrition isn't considered even though it is the most important thing of all, imo! The antibiotics may have caused leaky gut - plus Covid can affect your gut too.

Also you must strictly avoid gluten at all costs. Soy is a goitrogen and affects your thyroid so give that a miss, too. It's also in a lot of things. It is a pain reading food labels but once you have got foods that are safe for you, then you can build on that.

I too am having to restrict more foods. I have Hashimoto's and believe I am developing IBD, have had a rough couple of months. Gluten is affecting me and have found some relief by going gluten free but it's not the whole answer. Immune issues can affect your joints just as much as anywhere else.

You need to try to eat as good quality food as you can, and you may need to supplement nutrients. I take B2, B12, magnesium, iodine, selenium, boron and Vit E as I know these are all things I need. Everyone is different and of course needs change over time.

I wish I could say I am so much better now but in my late 60s I can't, I just try to do the best I can and keep track of my diet and symptoms, try to keep inflammation down.
