i have just made hedgerow jelly!!!

I eat it with any roast tbh, even just plain roast vegetables. Nothing like a bit of jelly to bring out the flavour of food!

I like Brae jelly - yummy. Will have to persuade ds to go picking with me so dh can do (he is jam maker supreme).

Blackberries
Rosehips
Apples
Elderberries

  • need about 5 parts of blackberries and apples to 1 part rosehips and elderberries - don't want too many of latter, but it certainly adds something to otherwise blackberry and apple jelly.

(we like ours like normal jam, on fresh bread!)

i used 1kg crab apples (mostly ours from new tree)
250g brambles/blackberries
200 g elderberries
250g hawthorne berries
125 g rosehips

500g sugar to each 500ml jouce
wanted to add damsons/sloes but couldn'd find any!

All free from around here apart from the elderberries which my kind neighbour climbed his tree to get for me!!

wash, put in pan, top up with water. bring to boil. simmer for about an hour.
put all mush in clean pillow case. tie to upside down chair and drip in big bowl overnight. boil juice, simmer for ages until you get a set. skim off scum - helps it not be cloudy. jar as usual.

yum, will have to look for me free stuff now!!

has anyone done anything just with rosehips? We have about 40 rose bushes in this garden (recently moved here) and cant bear to see them 'wasted' - although obviously the birds like them! would love some inspiration

OMG I am a country girl and I have NEVER heard of hedgerow jelly.

(No sloes here this season, I think it's been too wet and chilly for fruiting.

Bah

I luuuurrrve sloe gin.)

Do sound some nice ones there though.
