Sewing a baby blanket, fabric advice?

I'm a very novice sewer, I only make rat hammocks usually so they don't need to be perfect, but I'm not making a baby blanket for my sister who is due in July.
I have this:

Which will be the cotton side of the blanket, I now need something to back onto it. I was thinking minky fabric, the bobble stuff particularly, but have reservations. Many people say that it slides when being sewn. Then I'm wondering if it would be too hot for a baby due in the summer? I found this tutorial:

Where she uses a lightweight fleece fabric for the back, but I don't know where to get lightweight fleece from? I have loads of fleece at home (rat hammocks!) but that fleece is all quite thick and I don't think it'd be suitable for a summer-born baby.

Double gauze? It's lovely to sew either and quite light and airy compared to quilting cotton.
