to be very proud of myself for making pancakes from scratch?

I am a terrible cook. really, truly awful. I can barely boil an egg. but last week I made some currant buns, on sunday ds and I made some cookies and fairy cakes.

today I hovered over the ready-made pancake mix but instead left it, and have just made a batch of truly lovely pancakes. am preening. a LOT!

I make american style of pancakes (with buttermilk) -do them most weekends -much nicer and so much easier-know the recipe off my heart too!

Is v satisfying making something yourself-I love baking

I didn't get home fromwork last night until 10 so I started making them then and then DH took over when he got in at 10.15. He makes them miles better than me, he swers by Delia's receipe. I 've made tehm again for breakfast this morning

what are these pancake 'recipes'?

one cup flour + one cup milk + one egg =pancakes, no?

self raising flour produces thick american style ones, plain flour produces thin crepe style ones.

I expect the OP will be dashing them off without a second thought from now on too, but that doesn't mean making the first lot wasn't an achievement for her.

If you love pancakes then it's worth getting a proper pan for them - makes them even more super easy to cook.

can i also say to the people who are saying that their 7yo's cook them from scratch, thats great. they have obviously grown up in a house where they can cook and food is enjoyable. I am also an anorexic (didnt say before because i wanted this to be a light hearted thread) food and cooking isnt enjoyable to me.

i am proud, so ner!

I'd be proud too.I can make all sorts of quite more complicated dishes yet I'm defeated by bloody pancakes and fried eggs every time.

Congratulations! Pancakes are the easiest thing - can't see how the readymix is quicker, tbh, and god knows what is in it. I did notice just how much of the horrible stuff was packing the supermarket shelves though and I think a revolt is in order.

But making them from scratch doesn't mean complicated weighing and measuring either. 4 heaped tablespoons of flour, 2 large free-range eggs, enough milk to make the mix spoonable into a frying pan (rather than pourable like water) and a whisk. Done. My tip would be to use a smaller, provenly good non-stick pan, keep it just under incendiary heat and just show it a spot of butter first. Don't wallop loads of batter mix into the pan, keep them thin aim at crepe like results. Fab. Pancakes do need constant watching mind but I can't be arsed with tossing them.

(I am not the world's most inspired cook either, I hasten to add)

try chocolate brownies, they're quite hard to get wrong.

First turn the oven on, 180oC or gas 4.

Melt 300g of 70% cocoa choc with 375g butter. Leave it to cool down a bit.

beat 6eggs with 500g caster sugar in a big bowl.

Making sure the choc mix is not hot - tepid is fine - pour it in with the egg mixture and beat it with wooden spoon.

Add 250g plain flour and mix it altogether.

If the butter was unsalted then add 1sp salt too.

If you like walnuts add 300g of them, but no need to bother.

Pour into a big pan with a big piece of baking parchment in it so no need to butter and flour etc to stop it sticking. I use a rectangle pan that's about 35cm x 25cm

Bake until the top's dry but it's not really cooked inside. Takes about 25mins.

Was that obvious recipe stored in your brain from birth? Or did you by any chance learn it, so there must have been a time when you didn't know it either?

Just thought I detected a bit of an overtone of 'how could anyone be stupid enough to need a recipe? snurk'. Sorry if I was wrong .

Well after having just said that I can't cook pancakes I went to try out the Jamie Oliver recipe and they were perfect,even the first one.

I just need to master crepes now as I prefer thin pancakes.

I'm very of your cookies Queen.
