There seem to be lots of rather negative posts and topics so to celebrate the fact that it's friday I think we should list 5 things in our lives that make us happy!
(and no, I'm not on prozac, nor have I been at the vodka).

  1. Walking into my dd's room in the morning and being greeted with a huge gummy grin.
  2. Cuddling my dh
  3. Having a sister who's also my best friend
  4. The smell of fresh coffee
  5. A glass of really good red wine

What are yours??

Sure.

I'm in the US so don't know what the conversions would be though.

Dutch apple cake

Crust:

1 1/1 cups flour
1/2 teaspoon salt
1 teaspoon sugar
1 tablespoon. baking powder
1/2 cup butter
1 egg yolk
2 tablespoon. milk

Preheat oven to 375 degrees F.

Combine all ingredients and press into an 8 X 8 baking dish, so there is a small raised edge.

Filling:

3 baking apples peeled and sliced (could also use peaches or plums)

Place apples on top of the crust.

Topping:

3/4 cup sugar
1 1/2 tbsp flour
2 tbsp butter cut into pieces, cold
1/4 teaspoon cinnamon

Combine ingredients and sprinkle on top of the apples.

Bake for 30 minutes or until lightly brown and bubbly.

Serve with lots of vanilla ice cream and enjoy!

Hope you like it.

Great thread! I know it is no longer friday, but I shall continue the theme for today...

  1. DD talking. There are some words which make me gush more than others, but in general, everytime I hear her talk I listen with wonder and amazement at how clever she is. (for example, she told DH she needed a poo, after being put into bed with sleepsuit etc, he said 'oh you are joking aren't you?' and she said 'no daddy, I not joking' all serious)
  1. Our car has been fixed and we collected it today
  1. We saw a house we would like to buy. Not ours yet, but it makes me feel excited just thinking about it.
  1. I had a great lunch in a little pub a place called Cot in Devon this afternoon.
  1. My DH and both get each weekend off with DD. DH has worked alternate weekends for years, and since he started his new job 2 months ago he gets every weekend off.
