What can I cook with bacon and then freeze?

My freezer has defrosted and I had 5 packs of bacon in there! To try and salvage some of the food I’m asking for ideas of what I can cook with the bacon and then refreeze?
aibu to ask for ideas? (Sorry for not asking in food topics but I know this gets lots more traffic!)

You can make a delicious bacon jam which is perfect on burgers, hot dogs and even can be added in to help make a quick and easy pasta dinner. This is what id do. Carmalised onions, sugar etc.

You could make breakfast muffins or burritos. I would add it chopped up and cooked to eggs that you back in the office (loosen with water not milk or cream) and put it in a wrap or english muffin and freeze.

You can even freeze bacon bits. Render it down in a pan, save the fat in the fridge to cook with and spread the chopped cooked bacon bits on a tray to freeze then decant into a freezer bag. Wrap well as they do pick up freezer flavours if you know what i mean.

If you are looking for more meal centric idea. A bacon-ladon Bolognese sauce with mince sounds lovely to me or beef bourguignon again with heavier bacon than normal.

cook it, dice it up, freeze it flat on baking paper/baking sheet (so it doesn’t freeze in one massive clump) and then put in a ziplock bag in the freezer. Perfect for tons of recipes to grab and handful and throw in.
Omelettes, egg bites, pizza topping, quiche, pasta sauce, stews, soups, toasties, salads…...
Actually thinking this is a very good idea for my freezer larder!

You could just cook the bacon as normal ,maybe slightly underdone then freeze again. Perfect for quick bacon butty as you can add straight into air fryer, pan, microwave or oven from the freezer.

Yes, I'd chop it, cook, and freeze bags of bacon bits. Good for pasta bakes, risottos etc, with fresh pasta, potato salad. I'd be happy if I had loads of bags of it!

Grill it (which gets rid of a lot of the fat), chop it up and freeze ready to use in all manner of dishes.

Or make a sauce for pasta (bacon, onion, garlic, tinned tomatoes, plus peppers if you want) and freeze that in portions.

What about frying sone if it off with onions, carrot, celery to usexas an instant base for all sorts of stews, sauces etc in the future?

I'd cook it, cut into pieces and freeze

You could make lentil and bacon soup buy this would take up lot of space

Of course you can, once it cooked thoroughly. Why would you think you shouldn't freeze it?

Actually thinking this is a very good idea for my freezer larder!

I do this with bacon and pancetta that is going out of date I just cook it all eat some cut up and refreeze. I put it in rissotos and pasta etc etc.

Thanks all, just cooking and chopping before freezing sounds like the best idea, plenty to add to meals at a later date.

Refreezing meat you have cooked is perfectly safe to do.

It’s safe to freeze again after it’s been cooked.

If it’s only overnight and you immediately then rebook it, meat should be ok. The rebooking kills most bacteria. Also bacon has some previous preservative in ut, I think, even if it’s only salt.

It's fine so long as you cook it thoroughly before freezing. That destroys any bacteria.

Loads of bacon sandwiches, then you won't need to refreeze and you've used up the defrosted bread as well. Double win. Brown sauce on mine please.

I wouldn't make a full mirepoix with bacon but just fry bacon with onions - that's also a great topping for green beans.
