To put a freshly decorated cake in the freezer

Tonight I'm going to be decorating a cake and covering in a tub of Betty Crockers chocolate frosting. The cake will need to be transported to the party venue tomorrow and it's looking it's going to be a hot day

Im thinking about freezing the fully decorated cake overnight, getting it out in the morning and letting it slowly defrost whilst the party happens and hope it's fine for cutting at around midday

Any knowledgeable bakers out there what do you think?

Reasonable - great idea

Should probably add, I've already made the cake it's just a normal one tier cake baked in a silicone number thing and will be covered in the frosting and various other bits including sprinkles, smarties, mini marshmallows and a few sugar paper things

does it say on the icing if it can be frozen? I would probably just keep it in the fridge until overnight and then transport it in a bag with an ice pack if hot tomorrow.

I dont think that will work. Get a cooler box to transport it from the fridge.

I personally wouldn't but if you do only put the icing on and not all the other bits, particularly sugar paper

You can freeze it, but if it's a big cake I'm not convinced it would be fully defrosted by midday

Not sure about the frosting, but I would think it would freeze alright. But the sugar paper decorations would almost certainly disintegrate when defrosting, as these would attract moisture, and can't be refrigerated, you'd need to add those after.

I'd probably just chill it down in the fridge for a little while before you set off (still add the sugar paper decs later), then transport it in the boot of your car, with some freezer blocks around it and your a/c on full. How far as you travelling with it?

Freezing or refrigerating cakes risks them going dry unless they’re in an absolutely air tight container. Personally I’d not risk freezing it but it would be safe in the fridge if you have something airtight to put it in. I am no expert however, but I recently made and decorated 36 cupcakes in 32° heat to be transported to a party the following day and this worked for me. I surrounded them with ice packs in the footwell of my passenger seat with the air con turned on for a 2 hour journey and they got there safely.

Can you leave earlier and decorate it at the venue and store it in the fridge until cutting time?

Just decorate it tomorrow morning & transport it in a cool bag with ice blocks

I bake a lot and freeze cakes if it’s really hot. It will be absolutely fine freezing with buttercream / Betty Crocker frosting but don’t add anything else, take it out and once it’s slightly softened on the outside after half an hour or so a bit add the sprinkles etc.

Unless it's a fresh cream sponge, you don't need to do anything with it apart from put it in an airtight box overnight.

Freezing risks the icing sweating as it defrosts and the decorations deteriorating. Also,as mentioned, dehydration is a risk. If it's an ordinary sandwich cake- type mixture, it'll be fine.

I think it will be fine. Just keep it somewhere cool and out of direct light. You could even put ice packs under the box etc, but I think the risk of sweating is more. I've done a few cakes recently in hot weather and all have been fine. Riskiest bit is in the car- best place is in front footwell with air con on

Thanks for the advice everyone! I've covered it in Betty Crocker, put it in the fridge and put half a dozen ice packs in the freezer for travelling! I'll throw on the sprinkles and stuff at the venue
