Does this bread recipe need sugar?

Sorry I’m posting for traffic. I haven’t made bread in a while but even I know yeast needs sugar. But this recipe has none. Is that right? Google informs me the sugar in the flour might suffice?

Hosting friends for dinner and need to get my starters sorted asap!

Any help would be amazing. Thanks.

Some comments in the recipe suggest a tbsp of oil too. Is that right?

I don’t put sugar in my bread (sourdough!) even when I make a discard sandwich loaf. I do like adding olive oil to my bread occasionally, gives a lovely texture - but I’d follow the recipe for your first time perhaps?

I never put sugar in normal bread. That’s pretty much the recipe I do for my everyday bread.

The dried yeast is already fermented so no need for sugar. I’ve made this recipe and it works fine exactly as given

drspouse · 03/01/2026 11:52

I don't think fast action yeast needs sugar, though the bread maker recipes we use generally have it.

Baker111 · 03/01/2026 11:52

It depends on the type of yeast. This recipe uses fast acting yeast which doesn’t require pre-activating in water/ with sugar.

NimbleLemonNewt · 03/01/2026 11:53

I have the yeast which is a powder and doesn’t need water

You will be fine with that yeast. I use supermarket sachets of yeast and never add in sugar to the bread mix. I generally don't add in salt either or if I do it's only a half teaspoon.

BlackForestCake · 03/01/2026 12:03

All the sugar does is get the yeast going a bit faster. You don't need it.

Oil will make the crust a bit softer. In the recipe given it's just to stop the bread sticking to the tin.

I currently have a loaf in the oven: flour, salt, yeast, water. I make it most days and it rises without sugar.

CurlewKate · 03/01/2026 12:09

A little sugar might make it rise a little quicker- but it’s not necessary. I really don’t recomended leaving out the salt unless you know the people you’re baking for are used to salt free bread. It takes a bit of getting used to…

NimbleLemonNewt · 03/01/2026 12:18

Thanks all. Thought I knew best for absolutely no reason. No sugar it is!

This might sound dumb. But how do you incorporate making bread daily? This recipe is simple but my god do I feel like o am tethered to it. One hour this, 30 mins that etc. I would love to make bread daily but honestly don’t know if mentally I’m able to!

Honestly, it’s 10 minutes of actual work. Combine flour, salt, yeast and water. Mix it up. Put a wet teatowel over it and bung it in the proving drawer for 2-3 hours. Then fold and shape the dough, do a quick 15-minute prove under a pot then put it in the oven in my La creuset pot with some ice cubes. 30 mins with the lid on, 10 minutes without. I just put it together while I’m pottering around in the morning. There’s really not much to do. I do work at home though so I can just set an alarm when I need to do something so I don’t have to think about it.

The actual time being actively involved is minimal-maybe 15 minutes? The rest you just have to be around. It’s not like caramelising onions- you don’t need to watch it.
