We are off to a euro.camp trip in Italy in two weeks and I don't know what to try next

Get a buerer bite zapper, the more accurate version of the hot spoon. If the place you're going to has tiger mosquitoes, they are active 24 hrs a day, so you need to be quite proactive with your deterrents.

50% DEET and putting it on before it gets dark. Covering up in the evening... Early morning is also a risky time even though it may be bright outside. French pharmacies have great creams for bites (I'm sure Italian pharmacies have similar) nothing else but DEET works reliably and you don't know if they haven't worked until its too late.

It doesn't work, and there is no scientific evidence to say that it does. If it works for you then you aren't that attractive to mosquitoes.

Super strength jungle or deet based products are the only thing that really work for me and oral antihistamines for bites if it happens as I have a horrible reaction to bites

Worth noting that there are lots of tiger mozzies in Italy and they bite all day including by the pool so you need to be vigilant. I learned that the hard way when it was too late. You probably need to then shower before swimming and reapply everything again afterwards.
