Gluten intolerance/Celiac disease?

I put myself on a gluten free diet two weeks ago hoping it would improve my digestive system/Fatigue (chronic ferritin deficiency anaemia and chronic constipation). First week I felt nothing but hungry (since I don’t like most gluten free stuff 😂).
This week I have felt awful, in particular a bad headache that won’t shift.

Now - all of a sudden yesterday I felt amazing! Full of energy - brighter head, sharper … just like a different person.

Felt the same this morning - great! But went to a kids party this afternoon, couldn’t be arsed with the whole gluten free stuff so are a sausage roll. An hour later my mood drops, I start feeling utterly exhausted - so tired I could barely focus. Does it sound like I have an actual gluten intolerance?

Hi, I am gluten intolerant and have found different foods trigger different reactions, pasta for me is the worst. It does take a while for your body to heal/recover so don’t expect miracles overnight when you make the switch, also not all gluten free food is awful - though I’ve yet to find decent bread!

Possibly. In your shoes I'd book in with the gp to get tested for celiac. You will have to eat gluten for 3 months (I think) before the test.
If not celiac, could still be worth going gluten free for a longer period and seeing what happens. Might also be worth looking into fodmap foods.

It would make more sense to book in with your Gp so you could have a blood test and then endoscopy procedure to confirm or rule out intolerance. If you cut out gluten before the tests it will prolong your diagnosis.

If you get a specific diagnosis you can get help, for example extra luggage to allow you to take food on holiday etc.
