DP'S "compliment"

I made a chicken curry from scratch, mild because DD3 now doesn't like "spicy", blended vegetables in the sauce because DP is apparently a child and won't eat cooked vegetables, coconut milk and peanut butter to go for a more satay flavour plus add extra protein.

DD clears her plate which is unusual, DP tells me its really good, goes back for 2nds, says he really likes it because it takes like.....

A pot noodle.

AIBU to be a little bit frustrated?

I mean if he likes pot noodles I'd take it as a compliment lol I think it's more about the intent that the actual words :)

Do you cook for other professionals too or just Dr's?

I think I would be indignant,to say the least, if anything I'd cooked was compared to a pot noodle.

I'm glad it made someone happy lol!

He then went off on a long reminisce about is first flat in the late 90s, eating a pot noodle and a chocolate bar for lunch every day. Of course that was when pot noodles and chocolate was bigger and better.

I make it with hidden veg for DP and fairly mild for DD it isn't exactly gourmet but everyone enjoys it.

I make a big batch to freeze for later, no real measurements, just by eye or taste. I cook it in a big stew pot that can go on the hob. It takes about 90 mins total, but other than chopping at the start, the odd stir and tasting at one point to check flavour it is really low maintenance.

Blend veggies, i fill my vitamix with whatever I have, I always include onion, carrot and butternut squash but last night also had red pepper, spring greens and garlic, blended with the liquid from 2 cans of coconut milk and a couple of chicken stock cubes.

Cook chicken, last night was about 1.2kg of breast as it was on offer but I actually prefer thigh or leg fillets. Cook in the solids from the coconut milk plus garam masala and mild curry powder, i just shake it in but probably at least 5 tsp of garam masala and 4 tsp curry, don't be scared it takes more than you think.

Add blended vegetables, I swish about a cup of water around the blender and add that as well plus a big squirt of peanut butter. I get the squirty bottles as DD likes to dip apple in it, but probably 4tbsps of regular.

Cover and simmer for at least 30-45 mins until the liquid has reduced a bit, don't taste before that as vegetables are raw.

Taste to see if it needs anything, maybe add salt/another stock cubes, more spice, or the secret ingredient for a bit of sweet and brightness/acid, a couple of spoons of marmalade. I used to use mango chutney but one day I ran out and tried it out of desperation, the marmalade actually works better.

At this point I put the rice on, I use quick cook so it probably takes another 20 mins. It is really forgiving if you need to leave it longer though.

I freeze the leftovers in 2 tubs and either let it thaw and heat on the hob with a little bit of water, or stick it in the pan from frozen and heat with water stirring and moving until thawed and heated through.

A friend was staying for the weekend, and I made apple crumble from scratch She had no idea you could actually make crumble yourself as she always used a packet mix. She scoffed a bowlful and proclaimed it was every bit as good as the packet stuff. I was quite miffed.

Wow. The ultimate compliment from the discerning man! Reminds me of asking DP in the early days what he wanted for dinner. To which he replied "that prawn thing was nice (referring to seafood linguine I'd cooked from scratch for his birthday) or could get a kebab. Happy with either so whichever is easiest"

I wondered if I was adding too much salt and that was where the comparison was coming from, but I used 3 chicken stock cubes for 9 portions and no extra salt. I have no idea!
