To ask if it is OK to make chips with these potatoes (photo attached)

I had a bag of potatoes sitting on the countertop with the best before date of 13 June. I just opened them and they've sprouted all these green and purple bits. If I chop them off will they be ok to chop up and put in the oven?

I'm also 11 weeks pregnant hence being extra cautious

YABU - they're not ok
YANBU - they're fine to eat

I would if it was all I had in. Just cut the eyes and green bits off. Alternatively plant them if you have a garden - then you'll get loads of potatoes in the autumn.

I would use them as long as they are not coloured inside once you peel and cut.

It's mostly white inside with dots of green where the eye was chopped off

I do this all the time due to my seeming inability to check the potato cupboard before I do my online delivery 🤣. Waaay too many potatoes and then I order more

That's what I do - you get lots of potatoes ready for Christmas !

I was really hoping most of you would say I'm being overly cautious. This is what they look like chopped up. I probably wouldn't have thought twice if I wasn't pregnant... Will give them to DH as he's said he'd like it

My spuds sprout all the time despite me keeping them in a cool dark cupboard.
Like you have done I just chop of the sprouts and bruises and use them as usual.

I'd just cut the sprouting bits off and carry on. Due to my own time-blindness, I have to do this with my own potatoes with monotonous regularity.
