Batch cook ideas

So I usually make the typical bolognese/chilli/sweet potato curry when I have time to batch cook. But I'm just so bored of these! Any ideas of what I can do to add some interest , particularly veg... which I know doesn't always freeze well... what does everybody do, there has to be some better ideas out there! Thanks in advance

Spanakopita freezes brilliantly! I quite often make a version with a mix of green leafy stuff (leeks, spring onions, chard, spring cabbage etc instead of/as well as spinach). Think it's called Hortopita when done like that. Maria Elia also does a fab version that she calls Tomato, Feta, Almond & Date Baklava, which freezes very well too.

What about the base sauce for shakshuka made in bulk? Then you can just add eggs to the sauce (& feta is also good) before baking it.

I bulk cook & freeze a lot of chunky/pulse-based soups too - red lentil & chorizo; Tamasin Day-Lewis's chickpea & smoked paprika - that kind of thing. They make a really filling lunch or even an evening meal with bread & cheese & fruit.

Also, if you're bored of the bolognese/chilli/curry options, try new variants of them with different meats or as veggie alternatives. Mushroom 'ragu' is great, as is slow-cooked beef cheek; white chicken chilli; veggie chilli with butter beans & kidney beans; lamb keema with peas etc.

It's the wrong time of year but the meat base of a cottage or shepherd's pie freezes well, as do stews/casseroles.

We also freeze veggie pasta sauces, arrabiata etc.

The cheese sauce for mac and cheese freezes well too (we put peas, sweetcorn, broccoli and cauliflower in the sauce).

Chicken or veggie curries and keema work.

Chicken cacciatore and chicken chasseur.

Cajun tomatoes and pepper sauce. You can then grill up some cajun chicken, salmon, tofu etc and serve with the sauce, rice and green veg.
