Vegetarian meal for Easter?? Need ideas

Having a last minute change of family plans and having to host family at ours. 10 people with four vegetarians so trying to come up with something to cook. This wasn't planned and I don't want to make two mains as this would be faffy. My in laws and my immediate family are all into meat. Can't include nuts or fish. Please hit me with your best and easiest ideas, should also be suitable for kids.

We were meant to be going out for a nice pub lunch but they've messed up the reservation.

If you are vegetarian- what do you usually make for Easter?

I'm a veggie. If someone hosted me last minute I wouldn't expect a showstopping main. Assuming you are doing a roast then a Quorn roast for the veggies and the usual meat for the others. Don't cook the potatoes in animal fat and then everyone can have the same.

We tell vegetarian/vegans guests to bring their own food, eg veg sausages or whatever. We still provide spuds, salads, bread etc but I've found what one of them likes others may absolutely hate.

It works well and saves any hassle if you are up front about it.

I’d still do a Sunday roast with meat for the meat-eaters and then add a veggie main that can be eaten with the potatoes, vegetables etc. You could buy some veggie pies to go in the oven or even make a pie fairly quickly using ready-made pastry. Or just raid the supermarket frozen food section - they’ll have something that works.

We’re having roast lamb for Easter dinner - my parents in particular would be very disappointed to find they were getting a vegetarian substitution!

Big dish of cauliflower cheese, roasties, lots of vege. You could always shove some Richmond veggie sausages in too. Make sure the roasties, stuffing, Yorkshire pudding all veggie, if you’re having them.

I'm veggie and as much as I appreciate the effort, genuinely prefer just home made trimmings to a knocked up main that doesn't quite go, is fake meat, pastry or something randomly pasta or tomatoey. Not being ungrateful, just honest, it's meant positively. The trimmings are a source of delight. maybe an extra veggie dish such as creamed leeks or other gratin? I wouldn't add something extra for the sake of it though.

Just carry on doing the roast you were going
to do with lots of veg sides that everyone can enjoy. The vegetarians can tuck into veggie sausages while everyone else enjoys the meat main. I don’t think it’s fair to only cater for the vegetarian guests. You need to cater for everybody. It doesn’t need to be complicated or faffy. My vegetarian friend always used to bring her own main and tuck into the sides that I made sure everyone could have.
