Urgent - gammon joint!

Hia,

I have a recipe which is saying 20 minutes for every 500g at 140c fan (so 2 hours for a 3kg joint).

I had a 1.5kg joint arrive today. Assumed this would be 1 hour for dinner. The packet info is saying 2hrs 25 minutes cook time 😵‍💫

Who is right?

140 seems low and 1 hour isn't very long for a gammon joint. I would think it would be more like 1.5-2 hours.

The packet info will be correct, tailored for the Size and shape of joint

140 for an hour seems very low and very short. Theres no way that would be cooked through.

I would go by the packet to be honest.

And 140 seems a bit on the low side.

And often it's "20 mins (or whatever) per half kilo plus 20 mins (or whatever)"

  • Remove the gammon and turn the oven up to 220C/fan 200C/gas 7.

But turn it up for what? The glaze I assume? And for how long after? The remaining 1 hour 25?

Chaos.

If any good chefs can guess any instructions would be grateful. First ever time cooking gammon joint and we can’t get food poisoning right now.

I usually put gammon in a pan with cold water and bring to boiling. Drain and repeat. Then roast. Suspect the roasting time for the joint would be less than 2.25. I always cook for less times than packets recommend. I follow guidelines in eg hugh F-W book. Not killed anyone yet!

Thank you. It’s currently in a pan with 2cm water covered in foil in the oven. Doing the hour requested.

I just have no idea about afterwards 🤣

God absolute chaos.

Have found this recipe so switching 45 mins into cooking at 140fan 🤦‍♀️

  • Step 1
  • Take the gammon out of the fridge an hour before cooking. Weigh the joint and make a note of the weight. Heat the oven to 180C/160C fan/gas 4.
  • Step 2
  • Lay two long pieces of foil crossed over one another in a roasting tin, with the excess overhanging the sides. Put the onion slices, carrots and celery in the middle of the foil and sit the gammon on top. Pour in the chicken stock. Pull up the sides of the foil, scatter over the peppercorns and enclose to make a parcel.
  • Step 3
  • Bake in the oven for 25 mins for each 500g (so a 1.5kg joint will take 1 hr 15 mins, or a 2kg joint will take 1 hr 40 mins).
  • Step 4
  • Mix together the glaze ingredients in a bowl. Take the gammon out of the oven and let stand for 10 mins before opening the foil – be careful of the steam escaping, as it will be hot. Turn up the oven to 200C/180C fan/gas 6.
  • Step 5
  • Take the gammon out the tin and pour off the cooking juices (you can use these to make a gravy base, if you like). You can leave the foil in the tin, as it will protect it from the sticky glaze later.
  • Step 6
  • Cool the ham just enough so you can trim off the skin, leaving a good layer of fat underneath. Put the ham back in the tin, then score the fat lightly in a criss-cross pattern. Brush well with the glaze and return to the oven for 25-30 mins (brushing with the glaze again a few more times throughout) until the surface is burnished and golden. Rest for 20 mins, then carve into thick slices.

That’s still nowhere near the 2 hour 25min though. This is very confusing.

@POSTC123 usually 180 and 20 minutes per lb plus extra 20 min.

Right so we have done 45 mins at 140 fan
An extra 45 mins at 160 fan

Now it’s out and resting.

No idea how long to put back in yet. Maybe 45 at 200 fan then it’s had a while? Who bloody knows. This is blatantly going to be a disaster lol 😂

We have ham people! No idea if it’s cooked on the inside but it’s certainly incinerated on the outside.

so much so I had to peel some of the worst damage off 🤦‍♀️

We do this too often boiling it in apple juice and/or cider and simmering for an hour or so then it only takes 1/2 an hour in the oven with the glaze on

Assuming you don't have a meat thermometer, stick a metal skewer or a long knife into the middle of it. When you pull it out, touch it (carefully!) to your tongue, to see if its hot. If it's super hot, the joint is cooked.

Personally, I never roast gammon. I bung it in cider or full fat Coke and boil it for 2 hours, and then make a glaze of some sort and put it in a hot oven for 15-20 minutes. Works every time, and now I want gammon.

200 was probably just too high. I boil a bit then cook mine at 180.

Yep defo boiling next time!

My fan is quite intense. I think if it was moister then it would also be less likely to burn as quick with the glaze.

Like the idea of the apple juice or the coke!

Coke. Big arse cheap bottle of it, put the gammon in a pan and cover it in coke (let the fizz die down and pour in more, make sure it's covered) and gently boil for 2 hours.

Perfect and doesn't taste of coke but is beautiful 😊
